Need help w/ making mayonnaise
Well, I decided to make my own mayo the other day after finding a great recipe. Here it is:
1 whole egg
1/2 teaspoon dry mustard
1/2 teaspoon salt
2 tablespoons distilled vinegar (clear)
1 cup canola or vegetable oil
1 dash paprika (optional)
In blender, add egg, dry mustard, vinegar, (optional paprika) and 1/4 cup oil.
Turn on low for 1-2 minutes.
Turn blender off, and scrape sides if necessary.
Turn blender on, and while it is running, slowly add the remaining 3/4 cups oil.
Blend until the consistency of mayonnaise.
After I made this, it came out pretty runny.......is this the norm? According to the directions, it appears it's supposed to be pretty thick like the real mayo. The only thing I can think of that I did wrong was I forgot to add the salt until the end, but I did blend it in.
I figured some of you have expertise in this and can let me know what I should've done and possibly what happend, thanks!

Yes, add the oil VERY SLOWLY. Forming the emulsion is tricky.
There is a Good Eats episode on Mayo that explains this VERY well.If you could kick in the pants the person responsible for your problems, you wouldn't be able to sit for a month.

I added the oil very slowly....it took about 2 minutes to add it, I think that was slow enough? Maybe, I try it again even slower.
Where is this Good Eats episode?
Btw, it did taste great, well as far as mayo goes and it was cheap to make!

here are the youtube video clips of his mayonaise. We never tried it with a blender, just by hand and it takes a lot of whipping. It may have also been from using the egg white. We only use the yolk.

I watched the video.......that was so neat, thanks!
He did add the oil way slower than I added mine, drop by drop, so I'm going to give it another try.

If you really, I mean REALLY like olive oil you can use it as well. I never replace more than 1/2 of the oil with olive because it can be a little overwhelming in some salads. It also takes on the color of the oil and can be greenish to yellowish and that just doesn't look right to me.

I made some a couple of weeks ago in the blender and it did not turn out at all. I then made it by hand using a wire whip it turned out great. I used the top secret miracle whip recipe.

I make mine using a immersion (stick) blender. (Mine is a Bamix that I bought at a yardsale for $1 complete w/accessories)
In a pint jar (or other 2 cup container) layer in this order:
1 whole raw egg (room temperature)
Juice from 1/2 a lemon
1 teaspoon Dijon mustard
Pinch of salt
Pinch of sugar
1 cup vegetable oil (I use peanut oil)
Lower immersion blender blade until it is centered in the egg yolk. Turn on the blender, low speed for appr 20 seconds.
Increase speed to high and very gently begin small "wiggly" up and down motions with blender. You should be seeing the mayonnaise forming.
Very slowly start raising the blender higher in the jar. The mayonnaise should now appear as a column of mayo following the blades upward.
A couple of good up and down strokes and you should be finished.
The whole procedure takes less than 2 minutes.

I've never made my own mayo but will try it after watching Chef John.
