Chicken Soup recipe needed
I have a friend coming over for dinner tonight who has tonsilitis so I want to cook something that he can eat. Does anyone have a good chicken soup from scratch recipe they don't mind sharing? THANKS!!!

Ok, so I posted this on 4/27/2007 in answer to a request for tightwad meals....I had to go looking for it, and since I cannot figure out how to quote it, I am copying it:
NOTE: look at how much everything cost just 18 months ago!!! Also, I realize that you need this for tonite, so you could substutue and buy "good stock" and cook up some chicken and cut it up unless you have some socked away in your freezer!

Chicken Noodle Soup

It's so funny - I was JUST thinking about starting a thread like this. What made me think of it was what we had for dinner last nite.
My homemade chicken noodle is more of a method than a recipe, but here goes:
Get a bag of cheap ckn hindqtrs - i can sometimes find them for .29 a pound, but not lately, I just used a bag the other day that was .39 a pound
(.39 a pound times 10 pound bag = 3.90)
Skin the chicken and boil. I add whatever kind 0f veggies I have on hand, or none if I don't have any. (carrots, onion, celery - use it up!)
Boil till the meat falls off the bone - about an hour, or much longer - it doesn;t matter. I then take the chicken out and strain the broth getting rid of the mushy veggies (I just use them for flavour). Let the broth sit overnite and then take off the fat in the AM. Take the chicken off the bone and separate into casserole portions. I get about 5 bags of nearly 2 cups each or so.
OK - so you have the broth and 5 bags of chicken (5 meals)
3.9/= .78 A MEAL for the meat (it's only .58 a meal at .29#)
Now, for the soup - put the broth and ONE BAG of chicken in a big pot - (.78 cents so far), let it heat up and make noodles/dumplings:
2 eggs
1/4 cup milk
1 t salt
mix and add 2 cups flour
roll to desired thickness and let rest a few minutes.
then slice and drop in hot soup for an hour or so.
THAT'S IT!! I fugure the noodles have MAYBE 30 cents in them with the price of eggs going up 78 cents plus 30 cents = 1.08 FOR THE WHOLE MEAL I can feed my family fo 5 this meal and it will feed us two nights, plus a few bowls for lunches!!!!!!!!! We put crackers, or bread in it if we have it. If we don;t - it's still great!!

I don't think I've ever used a recipe for Chicken soup, I always just tend to throw it together.
Here is what I would "throw" together:
*Either homemade chicken stock or store bought broth (4 cups = 4 servings)
*1-2 cups cooked shredded chicken (or 1 can of store bought chicken)
*3-4 potatoes, cubed
*2-3 carrots, chopped
* 1/2 finely chopped onion
*2 stalks of celery, chopped
*1/2 package of egg noodles
*Seasonings (dried & crushed ~ oregano, basil, onion & garlic powder, salt & pepper and a bay leaf)
Bring broth to a boil, add chicken, potatoes, carrots, and seasonings. Cook about 20 minutes (cook covered so broth doesn't boil down). Add noodles, cook another 10 minutes, until noodles are tender! And enjoy!

I would SO LOVE to have you over for dinner, Traci!
I don't think you would want to come over on Monday night, though. My hubs and his friends watch wrestling at my house. We've been doing this every Monday night for about 3 years! It started as just three of us, now there's seven. It's my opportunity to make sure that our single friends get at least ONE good meal a week. Some of them don't get another chance for a home cooked meal (single men). In return, they provide me with entertainment.

My chicken noodle soup is just the plain traditional tasting soup...however, my bf's chicken noodle soup has a tasty mexican twist to it...yum.
cubed chicken breasts
tomatoes
cilantro
celery
carrots
pasta shells
salt
water
There's no recipe. Just do everything according to taste. It's absolutely delicious.
It has a reddish broth to it, though, so it's very untradiotional looking (cuz of the tomatoes).
We just had this today. My boys are eating it right now!
