    BELGIAN WAFFLES

    4 1/2 c. all-purpose flour
    1/2 c. granulated sugar
    1 tsp. cinnamon
    2 tsp. baking powder
    3/4 lb. sweet butter, softened
    4 eggs
    2 tbsp. rum

    Sift the dry ingredients into a bowl. Make a well in the center and put the softened butter, eggs and rum in well. Gradually mix the flour into other ingredients. Let the mixture, which will be a paste, stand at room temperature, uncovered, for 2 hours. Divide into small balls the size of 2 tablespoons, and cook them in a waffle iron. Cool on a rack and store as for cookies. (Note - Belgians eat these like cookies instead of as a breakfast food). Makes 3-4 dozen.

    BASIC WAFFLES

    2 egg whites, whip stiff and fold in
    2 egg yolks
    3/4 c. milk
    1/2 tsp. vanilla
    1 c. flour
    2 1/2 tsp. baking powder
    1 tbsp. sugar
    1/2 tsp. salt
    4 tbsp. butter or butter flavored shortening, melted

    Beat the egg whites until stiff and set aside. Add milk and vanilla to the well beaten egg yolks. Sift in the dry ingredients with the wet ingredients. Stir in the melted butter (after the butter is cooled) very slowly. Fold in the stiffly beaten egg whites. Pour sufficient batter on the grill to come within one inch of the edge. Cook each waffle for approximately 5 minutes.





    BUCKWHEAT WAFFLES

    1 1/2 c. whole wheat flour or unbleached
    1/4 c. buckwheat flour
    1/4 c. wheat germ (fresh)
    1/2 tsp. sea salt
    2 tsp. baking powder
    1 tbsp. brown sugar replacement
    4 eggs
    1 1/3 c. milk
    1/4 c. oil or melted butter

    Thoroughly combine flours,wheat germ, baking powder, sugar, and salt in large mixing bowl. Beat eggs and stir into flour mixture. Add milk gradually, beating until batter is smooth. Stir in melted butter. Bake on hot waffle iron for 3 to 5 minutes. Makes 4 large waffles.





    WAFFLES WITH HAM AND APPLES

    2 c. milk
    1 lg. egg white
    1/2 tsp. vanilla
    2 lg. eggs
    1/3 c. maple syrup
    8 (4 inch) waffles
    2 med. apples, 1 peeled and chopped
    and 1 sliced with peel on
    4 oz. ham, diced
    1/2 c. grated cheese

    Mix milk, eggs, egg white, syrup, vanilla together. Arrange 4 waffles side by side in lightly buttered 9 x 9 inch baking dish. Sprinkle with chopped ham and apples. Top with remaining waffles. Pour milk mixture over all, cover with foil, and let stand for at least 30 minutes or overnight. Top with cheese. Bake covered for 30 minutes. Uncover and bake 10 minutes more. Oven temperature at 375 degrees. Garnish with remaining apple slices. Serves 4, but may doubled.





    POTATO WAFFLES

    1 c. flour
    1/3 c. potato flakes
    2 tsp. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    2 eggs
    1 1/2 c. milk
    1 tbsp. salad oil

    Beat eggs, milk and oil. Mix with dry ingredients. Bake on waffle iron. 16 small waffles.





    EGGNOG PECAN WAFFLES

    2 c. Bisquick
    2/3 c. milk
    2/3 c. eggnog
    1 egg
    2 tbsp. oil

    Beat all ingredients with wire whisk or hand beater until well blended. Pour onto center of hot waffle iron. Add chopped nuts (pecans) as desired. Bake until steaming stops. Makes 3 (9-inch) traditional waffles.





    GERMAN POTATO WAFFLES

    2 c. biscuit mix
    3 sm. potatoes, peeled and cut up
    1 egg, slightly beaten
    1 c. milk
    2 tbsp. salad oil
    1 slice onion (1/4 inch thick)
    Applesauce or apple pie filling
    Sour cream

    In blender combine mix and potatoes, eggs, milk, oil and onion, blend until smooth. Bake in waffle iron. Serve with applesauce and sour cream. Makes about 3 cups batter.





    CHOCOLATE FUDGE WAFFLES

    1/2 c. shortening
    3/4 c. sugar
    2 squares chocolate
    1 tsp. vanilla
    2 eggs
    1 1/2 c. flour
    1/2 tsp. salt
    1/4 tsp. cinnamon

    Cream together sugar and shortening until well blended. Add melted chocolate and well-beaten eggs. Sift flour, salt, and cinnamon together and add to shortening and sugar mixture. Add vanilla and stir until well blended. Bake in waffle iron. Serve with ice cream and chopped nuts.



    SOUR CREAM WAFFLES

    Melt and set aside to cool 1/4 cup butter. Sift together into large bowl: 1 c. sifted flour
    2 tbsp. sugar
    1 tsp. baking soda
    1 tsp. cardamom
    1/2 tsp. salt

    Set aside. Beat until thick and lemon colored 2 egg yolks. Add the melted butter. Add gradually 1 cup thick sour cream and 1 cup buttermilk. Continue to beat until well blended. Add liquid mixture all at once to dry ingredients; mix only until smooth. Beat until rounded peaks are formed 2 egg whites. Spread beaten egg whites over the batter and gently fold together. Unless temperature is automatically shown on baker, test. It is hot enough for baking when a drop of water "sputters". Pour batter onto baker. Bake until steaming stops (about 5 minutes). Place waffles on clean towel and cover with another towel. Serve cold with butter or jelly. Makes about 8 round waffles.





    SWEET POTATO WAFFLES

    4 tbsp. margarine
    1 tbsp. sugar
    1 egg yolk, beaten
    1 egg white, beaten
    1 c. mashed sweet potatoes, cooked
    3/4 c. flour
    2 tsp. baking powder
    1 c. skim milk
    Dash of nutmeg

    Cream sugar and margarine. Stir in egg yolk, sweet potatoes, flour, baking powder, milk, and nutmeg. Beat until smooth. Fold in the egg white, stiffly beaten. Cook in waffle iron; sprinkle with cinnamon and sugar and serve.





    BUTTERMILK WAFFLES

    2 beaten egg yolks
    2 c. buttermilk or sour milk
    1/2 c. melted shortening or salad oil
    2 c. flour
    1/2 tsp. salt
    1 tsp. baking powder
    1 tsp. soda
    1 tbsp. sugar
    2 stiff beaten egg whites

    Combine egg yolks, buttermilk and shortening. Add sifted dry ingredients; beat smooth. Fold in egg whites. Bake in hot waffle iron. Serves 6.





    CINNAMON APPLE WAFFLES

    1 1/2 c. all purpose flour
    2 tbsp. sugar
    2 tsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1/4 tsp. ground cloves
    2 eggs, separated
    1 c. plus 3 tbsp. skim milk
    3 tbsp. vegetable oil
    1 c. finely chopped unpeeled Jonathan
    apple, about 1/2 lb.
    Vegetable cooking spray
    Cider syrup

    Combine first 6 ingredients in a bowl; stir well and set aside. Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form; set aside. Combine yolks, milk, and oil in large bowl; beat at medium speed of an electric mixer until well blended. Add flour mixture, stirring just until moistened. Stir in apple. Gently fold egg whites into flour mixture. Coat a waffle iron with cooking spray; allow the waffle iron to preheat. Pour 1/4 cup batter per waffle into hot waffle iron. Bake about 5 minutes or until steaming stops. Serve with cider syrup. Yields 12 servings (about 155 calories per 4 inch waffle and 1 tablespoon syrup).

    CIDER SYRUP:
    1 1/2 c. unsweetened apple cider
    1/3 c. firmly packed brown sugar
    10 whole cloves
    1 (3 inch) stick cinnamon

    Combine all ingredients in a small heavy saucepan. Place over medium heat, and cook 20 minutes or until reduced to 3/4 cup. Discard cloves and cinnamon stick. Serve warm. Yields 3/4 cup, about 37 calories per tablespoon.





    CRANBERRY - APRICOT WAFFLES

    1/2 c. flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    4 egg yolks
    1 c. cream style cottage cheese
    1 tbsp. butter, melted
    4 stiffly beaten egg whites
    1 (16 oz.) can apricot halves
    3 tbsp. sugar
    2 tbsp. cornstarch
    1 c. low cal cranberry juice cocktail
    1/4 tsp. almond extract
    6 drops red food coloring

    Sift together flour, baking powder and salt. In blender combine next 3 ingredients and flour mixture. Blend until smooth. Fold whites into batter. Bake in preheated waffle baker. Drain and cut up apricots, reserving juice. In saucepan combine sugar and cornstarch. Stir in apricot juice and cranberry juice. Cook and stir until thick and bubbly. Stir in extract, food color, apricots. Serve warm over waffles.





    LIGHT WAFFLES

    3 eggs, separated
    2 c. milk
    2 c. flour
    4 tsp. baking powder
    3/4 tsp. salt
    1/3 c. oil
    1 tsp. vanilla

    Beat egg whites in grease-free bowl until stiff. Combine all remaining ingredients including egg yolks into separate bowl and mix until just smooth. Fold egg whites gently into batter mix. Bake in waffle iron on high setting, approximately 4 minutes. These may be frozen after they cool and reheated in a toaster.







    GINGERBREAD WAFFLES

    2 1/4 c. sifted flour
    1/2 tsp. salt
    1 1/4 tsp. baking soda
    2 tsp ginger
    1 c. dark molasses
    1/2 c. milk
    1 egg, separated
    1/2 c. butter

    Sift dry ingredients together. Beat egg yolk. Add molasses and milk. Combine egg and flour mixture. Add melted butter and fold in stiffly beaten egg white. Bake in waffle iron. Serve with syrup or with ice cream, if used for dessert. Also Cool Whip.





    COCOA WAFFLES

    1 c. unsifted all-purpose flour
    3/4 c. sugar
    1/2 c. Hershey's cocoa
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    2 eggs
    1 c. buttermilk or sour milk
    1/4 c. butter or margarine, melted
    1 tsp. vanilla

    Combine flour, sugar, cocoa, baking powder, baking soda and salt in mixing bowl. Add eggs and buttermilk; beat just until blended. Gradually add melted butter, beating until smooth. Add vanilla. Bake in a waffle iron according to manufacturer's directions. About 10 to 12 inch flour waffles.





    HONEY WAFFLES

    2 c. sifted flour
    3/4 tsp. salt
    2 eggs
    3 tsp. baking powder
    6 tbsp. melted butter
    2 tbsp. honey
    1 tsp. cinnamon
    1 1/4 c. milk

    Mix and sift flour, baking powder, salt and cinnamon. Add the melted butter to beaten egg yolks, and add milk and honey. Pour into dry ingredients and mix quickly just enough to moisten. Fold in stiffly beaten egg whites and bake on a hot waffle iron.





    CHOCOLATE NUT WAFFLES

    Two cups flour, 4 teaspoonfuls baking powder, 1/2 cup sugar, 1/2 teaspoonful salt, 1 1/2 cups milk, 1/2 cup Crisco, 2 squares melted chocolate, 1/2 cup nuts (chopped), 1 teaspoonful vanilla and 2 eggs. Mix dry ingredients, melt butter and chocolate. Mix and add egg whites, last.

    I have a Belgian waffle iron/maker and here's the recipe I use when I do my OAMC sessions. I triple the recipe and get about 35 waffles total.

    Waffles

    2 cups all purpose flour
    2 T. sugar
    1 T. baking powder
    1/2 tsp. salt
    3 eggs, beaten
    1 1/2 cups milk
    1/4 cup butter, melted

    Heat waffle iron. Stir together dry ingredients; add wet ingredients and blend well. Cook according to manufacturer's directions.

    *** For banana nut waffles, add 1/2 cup mashed banana and 1/2 cup chopped walnuts to the batter.

    How to turn a mix into a treat

    Homemade waffles are a delicious, satisfying way to start the school day. They can be simple to make, too, using store-bought cake or muffin mix.
    Corn, bran and blueberry muffin mixes are not as sweet as cake mixes. Waffles made from muffin mixes will be a cross between coffee cake and the cap of a muffin--the crusty lid that's so desirable, cookware stores now sell shallow muffin tins for tops-only muffins.

    To turn the muffin mix into a waffle mix, follow the package directions but add an extra 1/3 to 1/2 cup of milk or water. The batter should flow slowly, like a thick pancake batter.

    For a 16-ounce box of muffin mix, add an extra 1/2 cup of liquid; for a 12- to 14-ounce box, add an extra 1/3 cup; and for a 20-ounce box, add just under 3/4 cup.

    You may have to add more liquid if there are nuts, blueberries or diced apples in the mix. Add an egg and oil if the package instructions give you the option for waffles that are crisp, golden and easy to remove from the iron.

    I forgot to mention that I have used Quiltermom's recipe and it's a good one. I added a dash of vanilla and some cinnamon. It is fast to mix up and tastes great. Much tastier than bisquick for homemade waffles.

    here's another:

    3/4 cup melted butter or margarine
    3 cups sifted all-purpose flour
    5 teaspoons baking powder
    1 teaspoon salt
    2 tablespoons sugar
    4 eggs
    2 1/4 cups milk

    Melt butter or margarine, set aside to cool.
    Sift dry ingredients in large mixing bowl. Set aside.
    Beat egg on High for 1 minute in small mixing bowl.
    Add milk and vanilla. Blend on low speed for 1/2 minute. Pour egg mixture over dry ingredients.
    Stir on low speed until dry ingredients are moist. Add cooled butter. Stir on low speed for 1/2 minute.
    Bake on preheated waffle baker. Makes 4 full sized 4 section waffles.

    Here's the one I use from Bisquick. I have OAMC these before, they are great!










    Belgian Waffles with Berry Cream
    With their sweet whipped cream topping loaded with strawberries and blueberries, these waffles are equally popular for dessert!

    2 eggs
    1 cup milk
    2 1/3 cups Original Bisquick® mix
    2 tablespoons sugar
    1/4 cup vegetable oil
    Berry Cream (below)
    Additional berries, if desired



    1. Heat Belgian or regular waffle iron; grease with cooking spray, vegetable oil or shortening.
    2. Beat eggs in small bowl on high speed about 3 minutes or until thick and lemon colored. Stir in milk. Beat in Bisquick and granulated sugar on low speed until smooth. Gently fold in oil.
    3. Pour by slightly less than cupfuls onto center of hot waffle iron. Close lid of waffle iron.
    4. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Top with Berry Cream and additional berries.

    Berry Cream


    1 cup whipping (heavy) cream
    1/4 cup powdered sugar
    2 cups sliced strawberries or 1 package (10 ounces) sliced frozen strawberries, thawed and drained
    1/2 cup fresh or frozen (thawed and drained) blueberries



    Beat whipping cream and powdered sugar in medium chilled bowl on high speed until stiff. Fold in strawberries and blueberries.
