    Default Last Minute, Desperation Appetizers

    We were invited to a delightful last minute party. This is the kind that someone puts together on a moment's notice.

    Ring, Ring...
    Hello?
    Hey, I'm inviting a bunch of folks to get together. Can you come in 15 minutes?
    Sure. No problem. What can I bring?
    Everyone's bringing an appetizer.

    I had to think fast as I peered into the fridge and pantry. I had a couple cups of sour cream, a handful of shredded cheddar cheese, and a couple pieces of beef jerky. Aha! I cut up the jerky with scissors, and mixed it with the sour cream and cheese. I also sprinkled in a little chili powder. But I had no chips or crackers in the house. I did have a little ziploc bag of broken pieces of chips. So I took them along. Once there, I mixed the broken chips into the sour cream mixture and stuck a spoon into the mix. Folks could spoon out a little onto their plates.

    And you know what? It wasn't bad.

    Any last minute appetizers from you? I'd love to hear of your creativity!

    ~I like crustini. Just take some thinly sliced Italian sub rolls(I always have some in the freezer)and top each slice with a bit of shredded cheddar cheese. Pop under the broiler for a few minutes until cheese melts. Then top each slice with a slice of tomato and bit of parsley. You can experiment with other veggies or leave them off all together.~

    I'd make hummus and bring it with pita chips or cut-up veggies. My hummus recipe is posted in the recipes section.

    ritz crackers with...

    large packet of cream cheese on a plate, dump on top:
    tabasco jelly, chutney, tomato jelly, chipotle jelly, barbeque sauce, anything sweet and interesting.
    11% gross to retirement
    10% takehome to tithe and offerings
    emergency fund maintained at 3000(works for me)
    credit card debt 7500
    mortgage free
    freedom accounts/sinking funds that ebb and flow
    then live on the rest!

    i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

    Since they're getting back in season...stuffed cherry tomatoes, stuffed with chicken salad is my usual, but use your imagination!

    I always keep some canned chicken on hand so if I need something last minute I would throw together some chicken salad and serve it with crackers.

    I make pepper jelly in the summer so I can also pull out some of that and serve that with cream cheese and crackers.
