    Default Pa Dutch Pot Pie Stew

    Use veal or beef or other meat as desired. Add onions and cook with meat until almost done. Add 3 large potatoes, diced and cook until tender.

    Dough:
    1 cup flour
    pinch of salt
    1/2 tsp. baking powder
    1 tbs. lard
    mix together like pie dough

    mix together and add to dry ingredients. Add more milk if too dry.
    1 egg, beaten
    1/4 cup milk

    Roll thin; cut into squares and drop into boiling liquid. Push each square down into boiling liquid until wet. Cover and cook 15 minutes without raising lid.

    Default Sauerkraut and noodles

    Chop 3/4 lb. bacon into fine pieces fry in large skillet till crisp and brown. cook sauerkraut about 15 mins.; drain and add to bacon, blend drippings well through kraut & cover and let simmer.

    Noodles

    4 tbsp. butter
    3 or 4 cups flour
    3 or 4 eggs (1 egg per cup of flour)
    1 tsp. salt

    Have about 4 quarts of salted water boiling. In a small skillet have the butter browning slowly. beat eggs and add about 1 cup or more of water, pour into mixing bowl containing flour, mix together throughly. It should be the consistency of cake batter (add water till this consistency is attained. Dip knife into boiling water, then edgewise into batter picking up long lengths of batter; drop into boiling water. boil noodles, unconcovered for about 30 minutes. Turn down to simmer for about 5 minutes, then drain. Place sauerkraut and bacon around edge of skillet; place noodles in center. Pour hot drawn butter over noodles and sprinkle with black pepper.

    Default Potato Bread

    3 potatoes
    5 tbs. sugar
    1 cake yeast
    1 heaping tbspoon lard
    1 tablespoon salt
    12 cups flour (appoximately)

    Cook potatoes in 8 cups of water; mash and cool; then add sugar and yeast. In a separate pan, mix lard and salt into flour. Add yeast mixture to flour mixture; knead, adding flour if needed. Grease and set in a warm place to rise until double; then work down and let rise. put into loaf pans; let rise. bake@ 375' 35-45 minutes. makes 5-6 loaves.

    Default PA. Dutch Crumb Cake

    4 cups flour
    2 cups sugar
    4 tsp. baking powder
    combine

    add
    1 cup butter
    and crumb with fingers. Reserve 3/4 cup for the top.


    to remaining crumb mixture add
    4 beaten egg yolks
    1 cup of milk

    Fold in the
    4 egg whites, beaten stiff

    pour mixture into 3 well greased deep 8" pans; sprinkle with reserved crumbs. Bake @ 400' for 20-30 mins. sprinkle top with melted butter and cinnamon when finished baking.

    This has got to be one of my favorites. I love this with a cup of coffee with real cream in the afternoon. Great for company.

    Default Gold Cake

    3 egg yolks
    3 egg whites
    1 cup sugar
    1/2 cup butter
    1 tbsp. vanilla
    5 tbsp. sweet milk
    1 cup flour
    1 tsp. baking powder
    1 cup coconut

    cream egg yolks and 1/2 white sugar; add butter and beat well. Add vanilla, milk and flour & baking powder that have been sifted together. Pour into a greased 8" pan. Beat egg whites until stiff; add sugar and coconut and mix. Spread on cake and bake @ 350' for 45 min.

    My Sister's favorite.

    Default Delicate White cake

    2/3 cups lard
    2 cups sugar
    1 tbsp. vanilla
    3 cups cake flour
    1/4 tsp. salt
    3 tsp. baking powder
    1 cup water
    4 stiffly beaten egg whites

    Cream shortening and sugar; add vanilla. Add flour, sifted with salt and just 2 tsp. baking powder, alternating, with water; beat well after each addition. Fold in egg whites, beaten with remaing 1 tsp. baking powder. Bake in a greased angel food pan @ 350' for about 50 minutes.

    This cake is good white 7 minute frosting, or if you want to really impress make a frosting of heavy cream whipped with a powdered sugar and top with slice stawberries that you've sweetened with sugar. HEAVEN!

    Default Flame Cake

    2 Tsp. cocoa(i use more)
    2 oz. red food coloring
    1 tsp baking soda
    1 tsp. vinegar
    1/2 lard
    1 1/2 cups sugar
    2 eggs
    1 tsp. salt
    1 tsp. vanilla
    2 1/4 cups sifted flour

    Step 1: Mix cocoa with food coloring; set aside

    Step 2: mix baking soda with vinegar; set aside

    Step 3: In large bowl, mix lard, sugar, eggs, sat and vanilla; beat step 1; then add flour and buttermilk, alternately to mixture.

    Step 4: fold step 2 into mixture

    Bake @ 350' in 2 greased and floured 9" pans for 30-35 minutes. 8' pans for 40 minutes

    Default Frosting for Flame Cake

    2 Tbsp. flour
    1 cup milk
    1 cup butter
    1 cup sugar
    1 tsp. vanilla

    Step 1: mix flour and milk and cook until thick and pasty.

    Step 2: cream butter, sugar and vanilla until fluffy. add step 1, a tsp at a time. Frost cake and keep in refrigerator.

    I make sure to beat this frosting good.

    I've tried a few recipes like this in the past. I particularly love apple fritters. Some of the other is more of an acquired taste which I've yet to acquire. Thanks so much for the recipes and ideas. I have a ton of apple butter that I made last fall... think I'll start setting it out on the table at meals.

    Suki, If you've never tired apple butter over cottage cheese give it a go. It is on every menu around here under vegetables to pick from to add to your supper. Sounds strange, but taste fantastic!
