    PA Dutch Recipes

    This thread is for those who requested recipes from my area and for those who just want good home cooking! These recipes are rich in history and are dear to the people who reside here. Restaurants around here are brimming with all the trimmings. Most have a crock of apple butter right on your table, because it wouldn't be a real supper without it. Family style restaurants are a given here and you'll find yourself getting into the spirit of things real quick as you are asking a former stranger to pass down the corn pudding. Around these parts hard work and good food are some of God's greatest blessings. So it is with great pleasure I share with all of you some of my families favorite recipes.

    Pepper Cabbage
    1 head of cabbage, grated
    1/2 green pepper, chopped
    1 large carrot, grated
    1 c. sugar
    1 cup vinegar
    1 cup water
    pinch of salt
    Mix the sugar, vinegar, water and salt together and pour it over the cabbage, pepper and carrot. Mix thoroughly. Tastes best if it can sit in the refrigerator for at least 1 hour.

    Dandelion with Bacon Dressing
    1 bunch of young dandelion greens, washed
    2 Tbsp bacon fat
    1/4 cup vinegar
    2 eggs
    4 slices of bacon
    2 Tbsp flour
    2 Tbsp sugar
    1 c water
    Hard boiled eggs, chopped

    Fry bacon, crumble and put pieces over top of the dandelion greens. Use flour and bacon drippings; mix to a paste with a little of the water. Add to the beaten eggs, water, sugar and vinegar. Mix well and heat in a pan until thick, stirring every once and awhile to prevent lumps. When thick, pour over dandelion sprinkle with chopped eggs and serve. Ingredients vary according to the bunch of dandelions you want to make. Best when dressing is served warm. This dressing can also be used over endive, garden lettuce or even potato salad.

    Default Apple fritters

    APPLE FRITTERS

    2 Tbsp sugar
    2 eggs
    1/4 c milk
    1 c flour
    2 tsp baking powder
    2 tsp lemon juice
    2-3 c chopped apples

    Cream together sugar and eggs, add flour and baking powder, then milk. Mix and add lemon juice and apples. Drop by teaspoonfuls into hot shortening or make into little cakes and fry in a pan like pancakes. Sprinkle powdered sugar and cinnamon over them when finished frying.

    I use another recipe sometimes with sliced apples that is really good, I'll hunt it down.

    1 3 lb. ham
    1 qt. dried schnitz (apples)
    Dumpling Batter:

    2 c. flour
    1 egg
    1/4 tsp. pepper
    4 tsp. baking powder
    1 Tbsp. milk
    1 tsp. salt
    3 Tbsp. melted shortening
    Boil ham for 2 hours. Pick over and clean dried apples and soak them in enough water to cover them, for as long as meat is boiling. When meat is done, add dried apples and water that they've been soaking in and continue to boil for another hour.

    Prepare dumpling batter: sift together the dry ingredients and mix the dough with egg (which has been beaten), the melted shortening and the milk. Drop batter by tablespoonfuls into the boiling liquid of the ham and apples. Cover tightly and cook for 15 minutes. You may add raisins if desired.

    My husband's Grandmother made this quite often

    Hot Milk Sponge Cake

    4 eggs, beaten
    2 c. sugar
    1 1/4 c. milk (heated until hot but not boiling)
    10 Tbsp. butter (melt with milk)
    1 tsp. vanilla
    2 1/4 c. flour
    2 tsp. baking powder
    Mix all ingredients together and pour into a 9 x 13" baking pan. Bake at 350 degrees for 30-35 minutes.

    1 broiler chicken, 1/3 c. cider vinegar, 1 t. kitchen bouquet, 1 t. wor. sauce, 1 t. each of onion juice, salt, pepper, paprika, garlic, 1 T. tomato paste, 1/2 c. melted butter.

    Cut broiler in 1/2. Get the broiler pan hot and grease well. Lay chicken on rack and put immediately under hot fire. sear on both sides. have ready a barbecue sauce made of all the other ing. listed above. Have a new clean paint brush, and during the broiling process paint chicken on all sides at least 3 times w/sauce. Make gravy out of the drippings.

    PA Dutch Corn Chowder

    1/4 lb. salt pork, 1 onion, 1/4 lb. Shaker dried corn ( or fresh or frozen corn) 4 potaotes, 2 T. flour, 1 t. dried celery salt, 1/2 t. paprika, 1/2 t. pepper, salt, to taste, 1 qt. milk.

    Soak corn for 18-24 hrs. in lukewarm water. Cut pork into cubes and fry golden brown. Mince the onion and fry until brown. Pare and dice potatoes and cook with pork and bacon in water to cover, pulp the corn, mix with spices and milk, and add 6-7 soda crackers which have been soaked in milk.

    Pa. Dutch Apple Butter

    10 lbs. apples, 4 lbs. sugar, 2 T. ground allspice, 6 qt. water, 2 T. ground cloves, 3 T. ground cinnamon.

    Wash and quarter apples. Boil the cider for 20 min. then put apples into kettle with cider and cook until apples are tender. Press through a sieve to remove skin and seeds. Add sugar and spices to pulp. cook until as thick as desired ( a soft paste); stirring frequently tp prevent burning. Pour into crock or glass jars.

    Because apples vary in sweetness, Add only 1/2 the amount of sugar to start, add the rest as needed to adjust the sweetness. Try substituting brown sugar for some of the white sugar.

    2 c. brown sugar, 1/2 lb. butter, 2 eggs, 1 t. baking soda, 4 c. flour, 1 c.sour cream.

    cream sugar and butter. Add eggs. Put baking soda into flour. Alternate with sour cream. Bake at 350 deg. for 12 - 15 min.. Oven must be preheated.

    Drop by teaspoon onto cookie sheet. Cookie sheet must be greased.

    STEWED DRIED CORN

    2 cups dried sweet corn
    3 to 4 cups boiling water
    1 tbsp. sugar
    2 tbsp. unsalted butter, or to taste
    Salt and pepper to taste
    1 cup milk (use evaporated for a richer flavor)
    Place corn in large saucepan. Add boiling water and soak approximately 1 hour. Add sugar, butter salt and pepper. Bring to a boil; reduce heat and simmer approximately 30 minutes. Add milk and cook for an additional 5 minutes. Taste for seasoning. Reheats very well.

    DRIED CORN PUDDING

    1 cup dried corn
    2 cups hot milk
    2 beaten eggs
    1 teaspoon butter
    2 teaspoons sugar
    2 teaspoons salt
    1 cup milk
    Grind the dried corn in a food processor, pour on the hot milk and let stand for an hour. To the soaked corn add the eggs, milk, sugar and salt. Put into a greased baking dish and dot with butter. Bake 30 minutes at 350°F. Serves 6.

    Dutch Rivel Potato Soup

    3 large potatoes, peeled & diced
    1/2 c. celery, diced
    1 egg
    1/4 tsp. salt
    flour
    2 c. milk
    3 Tbsp. butter
    pepper to taste
    In a saucepan put celery and potatoes, cover with water. Heat until mixture boils. While this is heating, make rivels....Beat egg, add salt and stir in enough flour to make crumbs that you can pull apart with your fingers. When potatoes start to boil, stir in rivels and cook until potatoes are tender. Add milk and butter and season with salt and pepper.

    I thicken with flour

    SHOO FLY PIE - LANCASTER COUNTY - WET FILLING Makes 2 8" pies

    1-1/2 cup boiling water
    1 Tsp baking soda
    1 cup molasses (King syrup & sweet molasses mixed is good)
    Dissolve soda in molasses; Stir til foams. Add hot water. Divide filling in two crusts.

    Mix dry ingredients for crumbs;

    4 cup flour +1/4 tsp salt
    2 cup brown sugar
    1 cup lard
    Sprinkle thickly on top filling.

    Bake@350 - 30-40 min.

    Chicken Pot Pie



    4 lb. whole chicken
    2 quarts water
    1 tsp. salt
    5 potatoes, diced
    2 c. corn
    1 medium onion, diced
    Pot Pie Dough:

    2 c. flour
    1/2 tsp. salt
    2 eggs
    4 Tbsp. water
    Cook the chicken in 2 quarts salted water until tender. Cool and debone, set aside. To the boiling broth add: potatoes, corn, and onion. Cook for 10 minutes.

    To prepare pot pie dough: combine flour and salt. Beat eggs with 4 Tbsp. water. With a fork work into flour and salt until you have formed at stiff dough. Add more water if mix is too dry. Roll dough out onto a floured board until thin. Cut into 2 inch squares. Drop Pot Pie dough into boiling broth a few at a time and cook about 20 minutes. Stir chicken pieces in and heat through.
