Why oh why can't I find a basic chicken/brocolli/rice recipe?
Ok, I've looked. I mean LOOKED. This isn't rocket science here. It's a simple recipe I;m looking for. I know you know the one I am talking about:
chicken
brocolli
rice
some kind of cream soup binder
this is what I want to make for a super simple supper....I assumed I would easily find it online. NOT SO!
help!
(yes, I even checked our FV cookbook) I am either blind, or it's not there.

I know exactly what you mean, we used to have it all the time and haven't in so long. I was trying to find the recipe last week and couldn't, even emailed my mother and got back some incredibly complicated dish with about 20 ingredients. She couldn't find her old recipe either.

I found this:
Campbell'sŪ Skillet Chicken & Broccoli
From: Campbell's Kitchen
Bake/Grill: 20 minutes
Serves: 4
Ingredients:
1 tbsp. butter OR margarine
4 skinless, boneless chicken breasts
1 can Campbell'sŪ Condensed 98% Fat Free Broccoli Cheese Soup
1/3 cup water
1/8 tsp. ground black pepper
2 cups fresh or frozen broccoli flowerets
Directions:
HEAT butter in skillet. Add chicken and cook until browned.
ADD soup, water, pepper and broccoli. Heat to a boil. Cover and cook over low heat 5 min. or until done.
You can serve it over rice.

OK, I found this on cooks.com. I'm making this one (minus the green peppers). I wanted regular rice, but I'll use the minute rice like the recipe calls for. I'm going to cook a couple of chicken breasts and cut them up in place of the canned chicken too.
CHICKEN, BROCCOLI, RICE CASSEROLE
1 (5 oz.) can Swanson boned chicken
1 c. milk
1 (10 oz.) can cream of chicken soup
1/2 c. chopped onions
1/2 c. chopped green peppers
1 med. size bag broccoli
1 1/2 c. Minute Rice
1/2 tsp. salt
1/2 tsp. pepper
American cheese, shredded
Combine all ingredients except cheese and put in casserole. Cover and bake for 25 to 30 minutes. Uncover, sprinkle shredded cheese on top. Bake an additional 5 minutes or until cheese is melted. Bake at 350 degrees.

This is the recipe I always use - its an old Campbells soup recipe
1 can cream of mushroom soup
1 c water
3/4 c reg long grain rice
1/4 t paprika
1/4 t pepper
4 skinless boneless chicken breast halves
In 2 qt shallow baking dish mix soup, water, rice, and spices. Place chicken on top of mixture. Sprinkle with additional paprika and pepper. Cover and bake at 375 degrees for 45 min or til done.
This is how the recipe is - now I'll tell you what I do - lol - I usually use cream of chicken soup and add broccoli. I have used bone in chicken breasts too and it works fine and also cut up already cooked chicken. HTHLaura

my wifes make broccoli/cheese/rice in the microwave. I suupose you could add pre-cooked chicken to it.
