    Default homemade nut roll

I make nut rolls around christmas and even though it's not a hard recipe it's time consuming. The recipe yields 6 nut rolls. Here's the problem. DH wants to take a couple to work tonight for the guys he works with. I really hate to make them so if I make a batch what's the best way to freeze the rest so I have them for thanksgiving and christmas?

It's a yeast type dough that once made has to be refrigerated 3-4 hours, then rolled out with a nut, sugar, egg white mixture spread on, then rolled up, left to rise 2 hours then baked.

Do i just make them to the dough ball stage, and freeze the rest of the dough balls? Make the rolls up, let rise then freeze? or completely make and bake them and try to freeze them?

i have never frozen dough of any kind before so not sure what the best turnout is?

I would not freeze the dough ball, as it can kill the yeast and you will not get the 2nd rise. I would try freezing completed and cooled rolls.

Or make a 2nd batch for Christmas.

    Will you share the recipe?

And while you will be mailing so many out......might as well put my name on the list too!!
