To me rosemary is highly overrated; a little goes a long way. It reminds me of a cleaning product called Janitor in a Drum. I feel the same about basil, star anise and cloves, too much like licorice.

I like oregano, cinnamon, sage, cilantro, cumin, dill and lots of garlic.

Love parsley, marjoram, rosemary, bay, savory, caraway seed
Ok in moderation: basil, thyme, cinnamon
Can live with a tiny bit: mustard, tarragon
Hate: cilantro, nutmeg, cloves, dill, pepper (black, red, any other color it comes in)
Worst of all: cumin. It smells musty and mildewed to me. Gag!Donna

Oh gees! I don't think there is anything that I just 'hate' - not a big lover of rosemary but thinking about buying some of the damn 'pine needles' and crushing them!! I haven't found a 'ground RM'---and who likes TWIGS in their food??? (though the flavor is okay)
I love all the others and love experimenting with them! Sometimes I don't even have a CLUE what they are suppose to be in - so I read on the back of them and just go for it.
Learned the hard way how potent red pepper flakes are - so I am real careful with the 'hot' ones.
One I can no longer find and even wrote to the company about was called 'citrus pepper' - made by McCormick. I have about 1/4 bottle left. Found something similar at Costco not long ago but still not the same.
My spice cupboard 'doth overflow' ---too bad the knowledge doesn't match!!!!
But it is fun!!

I like most herbs and spices except tarragon. I also hate watercress if that counts.
“When you get to the end of all the light you know
and it's time to step into the darkness of the unknown,
faith is knowing that one of two things will happen:
you will be given something solid to stand on,
or you will be taught how to fly.” - Edward Teller
“Our Earth is degenerate in these later days;
there are signs that the world is speedily
coming to an end;
bribery and corruption are common; children no
longer obey their parents;
every man wants to write a book and the
end of the world is evidently approaching.”
— From a translation of an inscription on
an Assyrian clay tablet, circa 2800 B.C.E.
God, grant me the serenity to accept the things I cannot change,
courage to change the things I can,
and the wisdom to know the difference.

Im just starting to explore fresh herbs and spices - very slowly. I will admit I like yellow indian curries but I have a reaction to tumeric - the one ingred in yellow curry that makes it yellow. Having said that - Asian curries - thai etc, red and green curries I LOVE!
When I use bay leaves in anything - I honestly can't taste it lol Is it just me?!2012: The Year Of The Purge!

Love using herbs and spices. One favorite flavoring for me is lemon. Both the juice and zest. Great alternative to salt. Garlic and onion powder are also a great alternative.
