Other than the basics already mentioned, I use Sazon & Adobo frequently.

I can TOTALLY RELATE to momto2boys...........I have one whole 3 shelf cupboard, beside my stove, that is ALL SPICES!

And love finding new ones..........or going to craft shows and buying them there. Our Big Lots is a great place to look for new ones......and they will get the 'specialty' ones in ...love them!

I did try to make a 'french fry seasoning' that a friend gave me---by just reading what was in it.......didn't turn out too bad.

Ditto! Once in a blue moon, I'll use a brown gravy mix for DH's meatloaf, but for "chicken fried" anything, I would much rather make a good ol' homemade cream gravy (country gravy) that's speckled with yummy black pepper! Re: bouillion, I hardly ever buy it. I'd rather try a base than a cube because I am not so fond of MSG or excessive sodium either (makes a girl's jeans and wedding rings hard to put on!).

    Spices I use a lot:

    Savory:
    Salt (regular and kosher)
    Pepper
    Cumin
    Chili powder
    Garlic powder
Dill weed (soooo good in green beans)
Rosemary (three words: red skinned potatoes)
    Tony Chachere's Creole Seasoning (mmmmmmm)
    Dried parsley

    Sweet:
    Cinnamon
    Nutmeg
    Ginger
    Orange peel

    Flavorings:
Vanilla (the good stuff from Mexico)
    Maple

I came across Budget101.com - - Frugal Seasoning and Spice Mix Recipes for everyday use today when looking up some homemade seasoning blends.

I'll be making a jar, or two, of meatloaf and Moroccan Rub mixes.

Mmmmm. I think the Moroccan rub would go well in meatballs.

    Spices/herbs I regularly use:

    oregano
    thyme
    rosemary
    mint
    dill weed (Penzey's)
    caraway seeds (Penzey's)
    cumin seeds (Penzey's)
    allspice (whole)
    allspice (ground)
    cumin (ground)
    cinnamon (ground)
    brown mustard seeds (Penzey's)
    mustard powder
    turmeric
    hot paprika
    sweet paprika
    Spanish smoked paprika (Penzey's)
    toasted onion powder (Penzey's)
peppercorn blend (my mom's homemade blend)
    table salt
    flake salt
    nutmeg (ground)
    lime powder (King Arthur Flour)
everything bagel topping (King Arthur Flour)
    blue poppy seeds (Penzey's)
    horseradish powder (Penzey's)
    parsley
    cayenne pepper (ground)
    basil
    curry powder
    clove (ground)

and I have the following extracts/flavorings:

Vanilla, Orange, Almond, Mandarin, Raspberry, Peach, Blackberry, Cran-Raspberry, Peanut Butter, Hazelnut, Pineapple, Peppermint, Strawberry, and Maple. The lime powder probably better fits here actually.

I recently ran out of Penzey's Chili 3000 (chili powder mix) but I can pretty well replicate it by mixing some of the others so I won't replace it.

My most used spices and seasonings would be:
    Sea salt
    Black pepper
    White pepper
    Cayenne pepper
    Garlic
    Coriander
    Parsey
    Rosemary
    Paprika
    Nutmeg
    Cinnamon

I tend to use mostly fresh coriander, parsley and rosemary plus garlic cloves in my cooking.

I rely heavily on my herb garden since I really like fresh stuff. Marjoram, thyme, oregano, basil, sage, tarragon, dill, chives, and rosemary are used often at my house. In the summer, I go through a lot of cilantro but pick it up at the store since it doesn't do well in my garden.

Other frequent flyers in my kitchen...sea salt, various peppercorns, red pepper flakes, ground mustard, chili powder, paprika, garlic, cinnamon, nutmeg, vanilla.

Not allowed in my kitchen...parsley. I cannot stand it!
