    Default What Can I do With Leftover Baked Chicken Breast?

    So, dh did the grocery shopping this week, and to his credit, he stayed with the list. However, when I put chicken breast on the list, I wasn't expecting the behemoth breasts that he brought home. (Okay, I could make a sexist joke here, but I will refrain.)

    I went ahead and marinated them in Italian dressing, then rolled them in a mixture of bread crumbs and parmesan cheese, and baked. He got held up at work, and so the kids and I snacked on cucumber slices while we waited, but the result was that no one was too hungry, except for dh, when dinner finally rolled around.

    So, other than just reheating, what can I do with these two huge leftover baked chicken breasts that I have? I thought about maybe chopping them up and making some kind of chicken casserole, but I don't really know what to make. Or, maybe somehow mixing them with pasta?

    I don't know...any thoughts? I'd be devastated to see these go to waste, so I'd love something simple and creative at which my family wouldn't balk.

    serrve them over salad?

    what about pasta and some red sauce w/ cheese and the chix cut up and baked in the oven?

    You can freeze them for later. They will be fine reheated in 2 weeks.

    chicken salad
    put between tortillas with cheese for quesadillas
    mix with tomato and mexican seasonings for tacos
    shred and add to soup
    shred and mix with bbq sauce for sandwiches
    pot pie
    chicken fricassee

    For most of these you'll want to scrape off the breadcrumbs.

    I use leftover chicken in fried rice.

    Chicken salad for sandwiches.

    My favorite - cubed in a salad with the usual salad vegetables and pineapple with 1000 Island dressing. Add slivered almonds make it's dinner for royalty.

    We sometimes cook a casserole with our leftover chicken. In a casserole dish add some cooked rice, a can of either cream of mushroom, cream of celery or cream of chicken soup and some cheese. Bake for about 20 minutes at 350*. You can add some crumbled Ritz crackers with butter drizzled over them to the top (bake it first, add the Rtiz and butter and bake another 5 minutes). Sometimes we add some kind of veggie to the casserole like broccoli, sweet peas, or corn. Some chopped almonds or water chestnuts give it a good crunch that our kids like.

    Yep, I was going to say freeze them, use for a pasta dish, or serve on a salad.

    You could make it into a sandwich or a topping for hm pizza.

    A great recipe from Kraft...I like it better served cold...but its good hot too!

    Chicken Taco Pasta Salad

    Prep Time: 25 min. | Total Time: 25 min. | Makes: 6 servings.

    What You Need!

    1 pkg. (12 oz.) farfalle (bow-tie pasta), uncooked
    1/3 cup MIRACLE WHIP Light Dressing
    1 pkt. (1-1/4 oz.) TACO BELLŪ HOME ORIGINALSŪ Taco Seasoning Mix
    3/4 cup TACO BELLŪ HOME ORIGINALSŪ Thick ‘N Chunky Medium Salsa
    1 can (2.25 oz.) sliced black olives, drained
    1 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheese
    1-1/2 lb. boneless skinless chicken breast halves, cooked, cut into strips

    Make It!

    1. COOK pasta as directed on package; drain.
    2. MIX dressing, seasoning mix and salsa in large bowl.
    Add pasta and remaining ingredients; mix well.

    Was gonna suggest since you've already semi(?) breaded them..thinly slice and rebread and rebake to crisp up breading to make chicken strips/fries.

    Chicken Casserole Recipe - Recipe for Chicken Casserole with Vegetables

    I'm making this for supper tonight. I'm using cooked turkey that's been cooked and chopped, just have to take the bag out of the freezer, but you could totally use your chicken too. It looks pretty much like a blank slate recipe that you can do whatever you want with (and no yucky canned soups or any junk like that, either!)

    I would make some chicken & cheese quesedillas out of them...or you could do a chicken wrap....or you could just slice them and throw them on top of a salad.
