so whats in store bought add water pancake mix?

not much of anything good... I highly recomend alton browns master pancake mix

Not sure everything that's inside the store mixes, but I make mine with this recipe:
1 1/4 cups sifted flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 beaten egg
1 cup of milk
2 tablespoons vegetable oil
Mix and fry on skillet or griddle

I'm wondering if I can substitute brown rice flour or regular rice flour for the sifted flour in your recipe, Sara. The kids love pancakes, but we've been sticking with gluten free mixes and they're so expensive.

I just did a quick google to see how common rice flour pancakes would be and I came across this - not sure if this is what you're looking for?

Here's a recipe that may work for you:
Rice Flour Pancakes
You could easily make up packets of the dry ingredients and add the wet ingredients when you want to make pancakes.
And another recipe: Delicious Gluten-Free Pancakes - All Recipes
You can also make your own rice flour by milling it in a coffee/spice mill. Use short- or medium-grain rice for baked goods. Short- and medium-grain rice are considered "all-purpose" when it comes to rice flour, while long-grain rice flour is typically best used as a thickener or dredging.
