Going on a picnic, care to join me?
It's a beautiful day here in the Village, sun shining, birds singing. The grass is so soft, let me lay down a blanket....
No Bees except at the flowers and ants have their marching orders to be elsewhere...
When it's just hubby and I usually pack a lovely bottle of wine, cheese, crackers & grapes.
Today though since all of you will be here and adding to the feast I brought this recipe to share.
Pizza Salad (may use pasta instead of lettuce and omit croutons) Sometimes add chopped marinated artichoke hearts too.
1 head lettuce, torn into small pieces
Pepperoni, sliced thin
Mozzarella cheese, cut into cubes
Cherry tomatoes, halved if large
Black olives
Red onion sliced thin, may omit
Diced green or red pepper
Combine all ingredients except croutons and dressing, store in serving container. Keep cold. Add croutons and dressing just before serving.

Hehehe this thread reminds me of my childhood friend when I was invited to join them on their picnics...the KFC kinda picnic!

At our picnics, I take Glade outdoor candles. They fit in the pretty glass oil candle holders and have refills. Once they are all gone, they blow out. Here's a pic
Keeps bugs away and is kind of nice for ambiance.McD

I'm in the mood for spaghetti salad
1 2# box of spaghetti cooked/cooled
1 16 oz. bottle of zesty wishbone dressing
1 bottle of McCormicks salad seasoning
mix/chill overnight for best taste.

I'll be bringing Curried Chicken Waldorf Salad with pita chips, extra blankets to sit on and my dogs... sorry nothing romantic here. I will bring super soakers and squirt guns to chase the dogs with though... Its good for a laugh and Cleo loves it.
Curried Chicken Waldorf Salad
1-2 Chicken breast precooked fine to medium dice
1-2 apples fine to medium dice
1 T sweet onion fine dice
1 stalk celery fine dice
1/2 cup pecans chopped
mayo to coat
1 tsp curry seasoning or garam masala for some flavor but no heat.
Mix and serve. I'm sure it tastes better the next day... but I haven't made more than a serving at a time yet.The Free Spirit Saver who walks the path with Greebo.

I'm all about the Grape Salad.
* 1 pound seedless green grapes
* 1 pound seedless red grapes
* 1 (8 ounce) package cream cheese, softened
* 1 (7 ounce) jar marshmallow creme
* 1 (6 ounce) package slivered almonds

i'll bring more wine!!! and cheese and crackers, roasted red pepper hummus and pita chips or whole wheat pita bread...not sure what else.

I'll bring chickpea salad.
One can of chickpeas, drained and rinsed, and mashed.
Cut up celery, dill relish, mayo(or Veganaise) S&P to your taste.
All mix up on some good whole grain bread.

Do you make your own roasted pepper hummus?
We have room for many more Villagers. My dd just showed up with her~
3 Bean Salad
3 different (15oz) cans beans: garbanzo,cannellini, waxed, green, kidney...rinsed and drained
2 celery stalks, chopped finely
1/2 red onion, chopped finely
1/2 c. fresh, parsley, chopped
1/3 c. apple cider vinegar
1/4 c. granulated sugar
1/4 c. olive oil
1 tsp.salt
1/4 tsp. black pepper
In a large bowl, mix the beans, celery, onion, parsley.
In an other bowl mix together the vinegar, sugar, olive oil, salt, and pepper. Add the dressing to the beans. Toss to coat. Chill well.
Hey, watch it with that squirt gun Ceashels. Watermelon eating and seed spitting contest starts in about an hour.

I would bring a dessert -
Chex mix, peanuts, raisins, m&m's, pretzels
melt white chocolate and mix everything together

I was thinking we need more beans.

I can black beans rinsed
I cup of your favorite salsa
plenty of garlic (don't you dare leave this out)
Throw in blender until smooth and chill for a bit. Wonderful dip with tortilla chips.

Well, you all have food covered pretty well thus far. So I bring -- entertainment! A guitar, some tamborines, a fiddle, a box full of toys for the field, frisbees, water balloons, baseball mitts, horseshoes, volleyball with net.
Aaaaaaaand... a pile of lumbar and a box of matches. Aren't we lucky that we picniced in a campfire-friendly park right by a lovely river? I bet the guys will have a great time catching brook trout.
Now surely someone will bring some marshmallows and hot dogs, right?

I will bring an umbrella for shade, my pale skin burns to a crisp. Also sunscreen and cloth napkins. Bags for trash and my new pasta salad that we had tonight. I was being creative and used what I had.
Italian Pasta Salad
box whole wheat pasta
box frozen spinach-thawed
jar of roasted red peppers
clove of garlic
tbsp basil
tbsp parsley
grated locatelli cheese over the top
