National Shrimp Scampi Day
For those of you who follow made-up food holidays like me

Shrimp scampi is one of my all-time favorite meals to have and it's really super easy to make. I never order it out because it is so easy to make at home and I like loads of garlic and there is never enough and it's much more cost effective to make at home
Just make sure not to overcook your shrimp or they will get tough and not be as delicious.
Shrimp (either fresh or frozen) is on sale at the stores I go to every week and 1 pound of large shrimp will feed at least four ~ medium may feed more.
It's a great meal to have for a special occasion! For whatever reason, I always serve it with peas



Easy Shrimp Scampi
1 pound large fresh shrimp
3 large cloves garlic, minced (use more if you like really garlic-y)
1/4 cup olive oil
1/2 cup unsalted butter
1/4 cup dry white wine
1/4 tsp. dried crushed red pepper
1/4 cup chopped fresh parsley or you can use dried
Peel shrimp and devein.
In a large skillet, saute minced garlic in hot oil for 1 to 2 minutes. Add the butter and stir until it melts. Add the shrimp and cook for 1 minute.
Stir in wine and red pepper; reduce heat, and simmer 1 to 2 minutes or until the shrimp turns pink.
Sprinkle with the fresh parsley and serve over your choice of rice or pasta.

Yum! This always looks SOOOO good and sounds even better but I'm not a fan of butter or buttery things
I have yet to try this dish and may just bite the bullet b/c the recipe you just laid out looks easy enough!

DH and I love us some shrimp scampi - yum! I use garlic, butter, and 2 tbsp fresh lemon juice and serve it over seasoned white/wild rice blend.

This is one of Lauren's favorites. I will have to tell her about shrimp scampi day

I bought some shrimp (frozen but cooked the other day). Maybe I'll make this tonight instead of salads.
edit: oops forgot to say that if I make it for the kids and not just Dave & me, I use chicken broth instead of the wine, even though the alcohol evaporates when using the wine

MMMMM looks great. Now I'm sad I ate all the shrimp in the freezer. A coworker was commenting the other day she thinks the price will go way up because of the disaster in Louisiana.

I don't eat seafood, but everyone else in my family does. Gabe would LOVE this.
