    Question Lye Water

    Whilst browsing the Asian groc store yesterday with my dad, I sauce this in the sauce aisle: LYE WATER (CHEMICAL). What would one use this for??? I was kinda scared b/c it was next to the hot sauces

    I found this while doing a quick surf of the interwebz...I am officially scared...why would they use this for cooking/food consumption!?

    It looks like it's used in making Chinese noodles (at least the page I read) and in Chinese desserts. I've eaten lots of both and I could have lived my entire life without knowing this

    Seems weird to me!

    Lye is also used to make lutefisk.

    It is used for a few things in cooking, but usually you wash the product before you process it further. (I am thinking about mesa meal and hominy). I couldn't imagine someone keeping it in the sauce asle though.

    Many stores no longer sell it as it is a key ingredient in some illegal drugs.

    Its also used in the processing of dent corn into corn meals/masa harina. The lye allows the hulls of the corn to be broken down so the inside nutrients can be consumed and absorbed more easily.
