    Default Attack of the cucumbers!

    Oh my, they are outa control & more are on the way, help! OK I have done cucumber salad and some refrigerator pickles any other ideas?! Thank you, thank you!

    I just made 4 pints and 2 quarts of dill pickles. And, yes of course Cucumber salad! Cucumbers, tomatoes, red onions, italian dressing and feta cheese....soooo yummy!
    I have five beautiful children and my wonderful best friend as my husband.

    I like to make cucumber boats (hollow out by removing the seeds with a melon baller) and fill with tuna or chicken salad, or some type of dip......if the cukes are small I'll serve as is, if larger then I'll cut it all into slices. Very tasty!

    Fridge pickles with dill never last here, so I'd just make more, lol!

    How about tabouli? I like mine with lots of tomato and cucumber and light on the parsley.

    We also use them like chips with dip. They are good with smoked salmon or some kind of salmon spread.

    Put them in salads, on sandwiches, make fresh cucumber relish, or make pickle relish.

    I second the thought of cucumber sammies w/cream cheese

    I also LOVE sauteed/fried cuc's with garlic and a pinch of salt or dash of soy. Last year when we had the garden, I'd eat that every night with no complaints.

    ~I posted the cuke salad recipe. Wish I had a recipe for my cuke dressing but I just wing it. It's a lot like the Greek dressing for giros but it uses mayo and buttermilk instead of sour cream.
    Here are the ingredients if you want to wing it and try it(it's incredibly addictive and whatever you do don't try it with potato chips! yum!):

    large cucumber peeled, seeds scooped out and discarded and diced
    scoop of mayonnaise
    1-2 TB dried minced onion
    1 tsp dill weed
    1-2 TB vinegar
    salt to taste
    milk or buttermilk to thin to desired
    Mellow in fridge for a few hours before serving.~

    I often just cut up the cukes add some onion and dress with whatever dressing I feel like.
    This recipe is good but next time I think I'll lightly salt the cukes and let sit in a colander for an hour or so to help get some of the liquid out of them.

    Cucumber Salad

    Mix in bowl:
    2T vinegar & sour cream
    1/2 tsp. sugar and dried dill

    Slice thin & add to bowl:
    2 medium cukes
    1/4 red onion

    Mix all and add salt to taste & lots of freshly ground pepper.
    Chill well.

    How about just some good ol pickles? Everyone loves pickles! I usually make 40 or 50 quarts every other year and serve with cheese and crackers or with beans.
