    Default Need a quick dinner idea

    What's your "go to" quick dinner? I don't have enough leftovers, or I would do that! I was going to make beef stew, but my mom got sick and I ran out of time. It's now 4:15 and I have to be out the door for a meeting at 6:30! I have beef cubes, and a stockpiled pantry. Ideas?

    Breakfast? Eggs, toast, etc....

    Put the stew in the slow cooker, grab a bowl of oatmeal, and have a late dinner after your meeting.

    Pasta? Soup? Rice and beans? Tuna sandwiches? If you have chicken broth and tomatoes that makes a decent tomato soup.

    Thanks guys! We had french toast. I couldn't have dinner after the meeting 'cause of the kids. I really need to re-think emergency dinner ideas!

    Pancakes are our emergency dinner plan. They are fast and everyone likes them. We make homemade ones and we always have the ingredients on hand. The only times we have pancakes are when they are an "emergency meal".

    French toast was a fabulous idea.

    truthfully, it was nice to 1. be able to come on here for an idea and 2. not eat out! That's what I was trying to avoid. usually, I would have just said "oh, well - fast food it is." yeay frugalvillage and the wonderful members!

    Good choice, French toast is great.

    Our 'quick dinners' are always egg based. I would make an omelette or a frittata. Last night we had 'omelette wedges' with Veda bread (a type of Northern Irish malt loaf). It was something along the lines of this (below) only with red peppers, minced garlic and no potatoes:
