    Default Looking for "instant" recipes that I can just add hot water to

    My husband travels for work, but packs his own food to save money adn to keep him from eating junk all of the time.

    I have a dehydrator and am looking to see about making him some "instant" soup or rice type meals that he can add boiling water to and let sit for a few minutes.

    Any suggestions? Thanks!

    We did several of the recipes from this site, for my MIL at Christmas. She loved being able to pack her lunch easily and fix it quickly.

    The budget 101 site has a lot of great soups but it seemed that most need some cooking time for re-hydrating. I wonder if you fully cooked your veggies first, then flake them with a veggie peeler before drying them - that way they can be quickly re-hydrated.

    Another option would be to hydrate them in the morning (or overnight) so all he has to do is add the hot water to make a broth? I have in mind a soup thermos with the dehydrated veggies in with some hot water to get them started in the morning then at lunch time he can add more hot water and shake.

    I was just looking for something similar, to keep at work so as to have something on those days that I don't bring lunch or don't bring enough lunch, to avoid having to use a cafeteria that just seems not to be able to make food that tastes like anything. Anyway, I ran across these:

    I've not tried these, and would use low-sodium chicken or veggie broth powder, omit any additional salt (you can always add it), add some spices and herbs if seasoned salt is called for.

    He could also take some fruit or veggies for a snack and then a container of instant mashed potatoes (dry) for his filler.

    I believe there are self-serve mac & cheese meals that are "just add water". For variety, that is, or maybe experiment making your own by cooking the macaroni first then dry it? Pasta is really cheap.
