Can you can cheese?
I found a great deal on some semi-soft cheese that, with added milk, makes a great tasting nacho dip. Do you have any suggestions about melting it down and canning it?

If done, I would slowly melt the cheese, and then process in a pressure cooker. I don't have a clue if it would turn out with a decent consistency, though.

You might try freezing the cheese and making the nacho dip from it after it's thawed. Try a sample first though. Some cheeses change texture when frozen.
