    Oh, yeah, that reminds me. I think I've decided to add Tortuga rum cake to our picnic meal for dessert. Too decadent for everyday use!

    I was just going to make lentil soup. Then I found out two families we know didn't have anywhere to go for Easter so I decided to make Easter dinner and have them over.

    We're having:
    -spiral ham with a maple syrup/pineapple juice marinade
    -mashed potatoes
    -stuffing
    -apple pie with ice cream

    One family is bringing green bean casserole
    Wife to Air Force DH for 7 years.
    SAHM to twin boys, Samuel and David!

    Spiral ham (put in the oven before going to church, fresh green beans and new potatoes (put in slow cooker after putting ham in oven), strawberry shortcake...... pretty easy!

    Family isn't coming so I'm cooking the foods my kids requested and will actually eat. They are not big on the traditional stuff.

    I actually don't have to work this Easter for once..I'm hosting..I'm excited about it too! Heres my menu:

    Breakfast:
    Zippy egg casserole..

    Dinner:
    Stuffed crab mushrooms
    Veggie platter
    Fruit platter
    Spiral ham
    Scalloped potatoes (Homemade)
    Baked mac-n- cheese (Homemade)
    Cabbage Salad (Homemade)
    Baked beans (From Scratch)
    Corn
    Grands rolls

    Dessert:White chocolate raspberry cheesecake (Homemade)


    Later in the evening my Aunt is coming over for a few cocktails of Bahama Mama's..A recipe I found on allrecipes.com!

    We're having ham, green beans, potato salad (homemade), Greek Easter bread (homemade), cherry-blackberry pie (homemade) or chocolate cake (scratch), coffee, soft drinks, milk.

    Future Projects: finish baby doll (clothes & hair) for DGD, rag rug, table napkins

    New Challenge for Myself: crochet items for the homeless

    Were not traditional when it comes to easter - I dont think i ever remember having a proper easter dinner.

    This year is no different were having a BBQ

    All week the weather has been wonderful 25C (77F) and for April thats the hottest its ever been for this time of year.

    I posted my family brunch menu on the Easter thread but here it is.
    There will be 19 of us tomorrow.

    We're going to start with a glass of sparkling wine (tradition in our family as well as in most of Holland).

    Then I have - in no special order since it will be served buffet style.

    tea/coffee/milk/juice

    bagels/muesli bread rolls/brown and white bread rolls/matze crackers/raisin bread filled with almond spice.

    of course butter and cream cheese

    fruit salad (mangoes/strawberries/apples/pineapple)

    sliced cheese/ham/thinly sliced roast beef/ham salad pie


    red pepper and tomato soup with basil cream served with a cheese stick

    strawberries marinated in prosecco syrup decorated with fresh mint

    asparagus with snippets of ham with a rich creamy sauce on the side

    sausages, bacon and fried eggs

    smoked salmon (with snippets of red onion on the side)


    For dessert, I have

    summer pudding
    cupcakes
    Easter choccies
    bunt cake
    coconut cookies.

    Should be good. Still debating whether or not I should make blueberry pancakes as well.
