Lynn4, let us know how the key limes turn out. I love anything with key lime in it, but recently I bought a key lime cheesecake for a band fundraiser and it was so bitter we couldn't eat it. (It was $20!) If yours turns out tasty I will do it, too.

Oh that does sound yummy...........will have to try it.
But I would add more lemon......and some of the reviews said the same. I want a good tart lemony flavor.

Hmm, I never thought it lacked lemon but I think I'll do the same and see if I like it better. I'll report back on my results.

I made the key lime filling today. I didn't use the recipe in this thread, I used the other recipe listed at the site for Lemon Icebox Pie II as I was too cheap to buy 2 pkgs of cream cheese:
Ingredients
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk (I used 7 oz.)
1/3 cup lemon juice (I used 2 key limes)
1 (9 inch) prepared graham cracker crust (no crust, I put it in dessert cups)
I made my own sweetened condensed milk from scratch. I only used 7 oz. for the recipe. I used two key limes. Three would have been easier as I had to wring them like mad to get enough juice. I also added lime zest and tasted it along the way to make sure it wasn't bitter or over powering.
I didn't actually make a pie. I have to do gluten free and I wasn't up to making a gluten free graham cracker crust from scratch today. Instead, I poured the filling into 4 (1 cup) dessert cups. I have a couple Kinnikinnick Smoreables graham crackers that I'll break up and toast with a little butter on the stove and then top the dessert cups. This is going to be my key lime pie fix--I used to be an Edward's key lime pie addict before I had to give up wheat/gluten.
The filling tastes good, could be more tart--I like it tart, but it will do. It's super easy to put together and I'm sure I'll make it again! I like making portioned sized desserts--otherwise I end up eating way more than I should!
