Chicken Breast Recipes Needed
I have almost an unlimited supply of precooked unbreaded grilled chicken breasts. I've eaten them plain with sides, made quesadillas, made chicken salad (with mayo). My next adventure is to make a grilled chicken caesar salad. But after that I'm at a loss as what to make with them next. Does anyone have any suggestions? I'd prefer not a casserole since it's soooooo very hot outside.

I'm not much of a recipe follower, I tend to cook like I'm doing a totally free style art project.
I use alot of chicken, usually boneless skinless breasts. Here are some of my ideas:
Add to a spagetti dinner- could dice and add for a chicken catciatore type dish, or whole with mozerella for a healthier chicken parm.
Dice and saute in butter or oil and garlic with your choice of vegetables and serve over rice or noodles.
Dice or slice and add to a toss salad.
Season with lemon and pepper or marinate in Italian dressing before cooking.
fruit is really good with chicken, especially apple, mango, pineapple or mandarin orange. you can cook and cool the chcken and add the fruit for a cold dish or you can saute or grill the fruit and top the chicken for a hot dish.

Chicken Salad!

my vote is also for a quick easy chix salad. try it w/ lemonaise. very tasty! add some diced red onion and celery and apple if you like it.

Slice it like you would to top a salad but instead toss it with some heated tomato or alfredo sauce and serve over pasta.

Dice up fine and use it as the meat for a meat sauce for spaghetti vs using ground beef?
Cut into thick strips, dredge in egg wash and flour and crumb mixture to make your own chicken strips/fingers?
What about tossing veggies into the crockpot with stock/water and once the broth is ready, add the chicken long enough before serving to heat through? Homemade chicken soup, chicken and rice, chicken and pasta soups.
Chicken a la king?
Chicken pot pie - use premade pie crusts?
Sliced chicken breast in a pita? Cold chicken sammies?
Dice/cube up into large chunks and skewer inbetween veggies, coat with a vinaigrette or bbq sauce and grill for a few mins?
Dice up with chunks of fresh pineapple and heat with a jar of sweet and sour sauce for your own version of a Chinese take out?
Grill it up and serve with gravy and mashed taters?

Thanks... great ideas. I did make a ramen noodle stirfry with ramen, chicken and veggies and a splash of teriyaki sauce... yummy.
I've also made a lot of chicken salad lately because I also get the grilled chicken from KFC given to me (yeah, my friends like chicken and are generous with it ... LOL).
I'm going to make some chicken parmesan with it and I'm gonna try making a quicky chicken noodle soup too. The chicken pita sounds good and I'll spice it like a gyro.
