    Default An odd baking question:

    I made pumpkin bread and in one bite of it I found very bitter, soapy tasting mess. It was so bad I spit it out to see if there was anything unidentifiable in the bread but I couldn't find anything out of the ordinary by the look of it.

    The only thing I can think of is the oil (fat) and baking soda (a mild alkali) had their own little chemical reaction in the bowl and made a clump of soap product.

    Has anyone else ever noticed this happening in a quick bread? It has me baffled!

    I'll be sifting the baking soda into the flour in future endeavors since I liked the recipe so much.

    I've had something like that happen to me before and I Think it was clumped baking powder or baking soda. After that, I started taking extra care to really mix the dry ingredients up before i add the moist stuff. It wasn't soapy though. It was just bitter.

    I agreed that it was baking powder or baking soda. I've tasted little clumps of it before and it's very bitter.

    I was making two batches at once so when I added the oil to the bowls, each had a chance to sit and have the oil saturate into the dry ingredients. I think I'll start sifting my dry before baking, just to be on the safe side.

    Is the oil fresh? Sometimes I buy a jug of oil and it sits in the pantry too long.

    Yes, was probably the baking powder or soda. If it wasn't sifted into the flour ( I am so guilty of this at times ) , it will leave a bitter taste in your baked goods . Also they say if happens to be old, throw out and get new.

    You might consider going aluminum free as well which can also lead to a bitter taste. Hope that helps. Here is a good explanation of it:

    Thanks Happy Mama.............I am going to check and see if my Safeway has it.............have never heard of this...........nor have I seen the brand w/o alum.

    Thanks Frugal Fanny. I order mine from Bob's Red Mill , his brand is aluminum free. Then make my own baking powder, as I want no aluminum or additives that give me a headache. Hope that helps. I buy a case at a time. But I use mine to bake, clean and have a chemical free pool in the summer...LOL

    Everything is fresh in the pantry and I keep the jug of oil in the fridge so it lasts longer. The rest of the bread was wonderful, just that one bite that made me cringe.

    Thank you for the article I'll be copying that recipe down for single acting baking soda. I've heard of aluminum free baking powder but have never seen it on the shelves. I may need to try a different store.

    I don't use his recipe for baking powder. I use 1/2 cup baking soda, 1/2 cup arrowroot power and works like a charm. I can't have cream of tartar or cornstarch.

    Rumsford is aluminum free and that might be at your grocery. I started buying it because a lot of things that had baking powder in it taste like baking powder to me. My mom used to like clabber girl biscuits and they taste nasty to me, like she pours half a can of that stuff in. I think the aluminum free stuff tastes a lot better.
