Frozen salmon
I purchased a 1.5 pound piece of frozen salmon. It looks like it has been cut in sections but the piece of salmon seems to be frozen in one solid piece. Which is fine but I can't eat all that salmon at once. Should I just defrost it. Cook it and then freeze in smaller portions? I figure I can just reheat the salmon by poaching it to keep it moist.
Does anyone else freeze cooked salmon? I figure defrosting in the refrigerator and refreezing in portions might not be a good idea with fish. Realize I can do that with meat.

Ain't no such thing as 'fresh seafood' in Kansas so everything we get it frozen. It's possible the fish has merely been scored to mark portion sizes, but you won't know until it is thawed.
You can partially defrost fish and cut it up or break up the pieces if it comes as fillets in a bag. It will be softening around the edges but still crunchy in the center and just go at it with a sharp knife and a good bit of muscle. It's safe to refreeze as long as it is still icy cold.Use it up, Wear it out,

you can easily cut frozen salmon...just use a super sharp knife and it should cut clean and easy
