Leftover Turkey
What have you been doing with it? Who's still got some?
We made 2 turkeys because they were only 5.5kg and we were having 15-20 people. We had almost an entire turkey left over - and then we were away on Boxing Day and most of yesterday (eating my inlaw's leftovers) so we weren't even here to eat it.
Dh has had a few turkey sandwiches, but I'm all turkeyed out.
I have the leftover legs and wings on the stove now for stock, a carcass in the freezer for stock some other time, and another carcass in the fridge that still has meat on it. Plus some bits of meat in the pan.
This afternoon I mixed up about 4 cups of shredded meat with caramelized onion, pesto, cream cheese, and asiago. I made some homemade pasta and stuffed the turkey mixture in it to make ravioli. It came out quite tasty, or at least tasted totally different than a turkey sandwich
. Way too labour intensive though and I still have half the mixture left. I need to think of something else to put it in.
Anyone else create something new from their leftovers?

I make crockpot turkey tetrazinni. It has cream of chicken soup shredded cheese and spaghetti noodles in it. I also put some sautéed onions in it as well. I took it to a potluck and everyone thought it was sooo good. And it was a super easy way to use the leftovers!!

Get some puff pastry from the supermarket, it comes two sheets to the package, cut each sheet into four pieces, put some filling into the center, fold one corner kitty-corner to create a triangle. Bake at whatever they suggest, I think it's usually around 425 deg. Turkey turnovers.

Bag up those bits and throw them in the freezer. Freeze your broth separately. Turkey potpie is always good! I have a yummy recipe for turkey bisque I'll share tomorrow

We slice the leftover turkey into the thinnest we can so we can make sammies (like lunch meat). Or dice up w/celery like turkey salad for sammies.
Turkey pot pie, turkey a la king, turkey gumbo, turkey fried rice, turkey omelets, turkey quiche, turkey instead of beef for pasta meat sauce or add it to alfredo sauce? Bake it up in a casserole?
What about using it to make turkey enchiladas? Or any other Mexican chicken dish?2012: The Year Of The Purge!
