So you have a pound of ground beef...
and a fully stocked pantry.
What is your go-to meal?
I feel like we are in a spaghetti, chili, taco meat rut. I serve the chili and taco meat in different ways but we are getting burnt out.
Ideas?McD

Hmmm, the wife showed me a recipe the other day, it was hamburger stuffed with cheese I think made in a muffin pan.
She said she was going to try it with mashed potatoes instead of cheese. (shepherds pie)Russ

Stuffed peppers.
1 bell pepper per person
1 lb meat, browned and seasoned
1/2 cup of ricotta (or any cheese)
small amount of shredded cheese
Pre-heat oven to 350-375*. Cut tops off peppers and remove the seeds. Boil peppers until softened (not totally soft, they will tear apart and not stand up if too soft), approx 15 or so minutes.
Mix meat and cheese.
Remove peppers from water, place on cookie sheet. Add meat to inside of peppers. Bake for around 8-10 minutes. Remove from oven, add a little shredded cheese to the top and place back in oven for a minute, until cheese is melted.
Personally, I do not eat peppers. When I make this for DH and the kids, I make myself a salad and add the meat mixture to that. Or, I just eat the meat by itself.DD (19)

hmmm, no shapes ... is a patty a shape?
My no-name dish
1 cup white sauce
1 pound ground meat
salt, pepper, spices to taste
egg & breadcrumbs
Add the browned beef to the white sauce and put it in the fridge to cool. Make small patties out of the beef/sauce mix (it should be somewhat smooshy, but not drippy) dip in egg wash, dip in to breadcrumbs.
I don't use a lot of oil to fry it, basically just enough to cover a pinky nail deep. Brown on each side.
I can't be out of money... I still have checks left!

Egg, spinach and hamburger bake
12 eggs
1 lb hamburger, seasoned and browned
1 package of spinach (or veggie of your choice)
1/2 cup shredded cheese (optional)
Preheat oven to 400*.
Scramble eggs in a bowl, pour into a 9x12 baking dish (spray with Pam first).
Add meat, cheese and spinach, mix.
Bake for 20-25 minutes, until egg is cooked through.
Slice and serve.DD (19)

Lady V, that No-Name dish sounds good! I'm going to try that.
Love Shepherd's Pie, one of the few things I'll eat red meat wise (that and chili are about all I can stand of red meat, not even steak!). I grew up on stuffed bell peppers but haven't made them for my family yet. Thanks for the reminder. I think my hubby would love that. He likes bell pepper flavor a lot. Great ideas!Totally debt free since January 2011.

Our kids always loved this. It makes a big batch and freezes well. We liked it in sandwiches with butter sometimes, too.
Goulash
1 lb. hamburger
1 onion, chopped
1 box mac and cheese
1 can (or half pound frozen) peas, drained
1 can kidney beans, rinsed and drained
1 can diced tomatoes with liquid
Chili powder to taste
Brown hamburger with onion, drain if needed. Cook macaroni and drain. Combine all ingredients including cheese powder from mac and cheese and heat through.

DH used to make a great stuffed beef roll, but that would be shaped.
He used to fill it with cooked rice, green pepper and cheddar cheese. Yum!

I love hamburgers. And cheeseburgers. But I don't shape those myself.....I make hubby do that or I find the preshaped ones on quick sale.
