Default First try at banana bread

My 3 year old has a bad habit of asking for something, taking a bite then not wanting anymore. He did that a little while ago with a banana. We had 2 left...he had already eaten 1 before nap, and I said are you SURE you will eat it? Anyway, just as predicted, 1 bite, then he didn't want it. I'm trying SO HARD to not waste food anymore, so I thought, what in the heck can I do with this banana? I don't like them, (texture thing) so me eating it was out of the question. Googled banana bread and just threw it in the oven. I'm down to a 1/2 stick of butter, so I used his cinnamon applesauce instead of butter. Healthier anyway, and used whole wheat flour instead of white. Thanks to you guys the other day, I had SOFT brown sugar. So cross your fingers for me this turns out!

Turned out pretty good! A smidge dense but all in all not bad. Good flavor. Next time I'll add some chopped nuts and more cinnamon though. Maybe some other spices. And wouldn't ya know Gavin just asked me for another banana and I used both in the banana bread. Which he is refusing to try of course!

Mama was great about turning browned bananas into banana bread. We used to joke about it "Oh, they're getting brown, here comes banana bread."

In fact, I have three brown bananas in the freezer waiting for the inspiration to bake them into bread.
