Is it a whole chicken? you could stuff it, fry it, or do like my mother used to do I think she called it fricasse. Coat it with flour and fry it until it is crispy but not necessarily done then pour off fat and put it all back in the skillet and add a tall glass of water and let it cook in the water, it gets so tender and juicy. Just add your favorite spices to the flour mixture, you can even add some sliced onions before the water. it is good!!

I would just season it and bake it, then carve it up...as you would a turkey but not as long time wise....My family loves whole chickens done this way...sometimes we stuff them sometimes we don't.

My favorite way to do a chicken is this.

    Roast Sticky Chicken
Seasoning~May make 1/2 a recipe for a smaller bird or make reg ammount and save spices for next time.
    2tsp salt
    1 tsp. paprika
    1/4 tsp. cayenne pepper
    1 tsp.onion powder
1/2 tsp. thyme & garlic powder
    1/4 tsp. black pepper
Mix spices together and set aside

1 Large chicken, remove giblets and rinse bird .
1 c. chopped onion (these go in just before cooking)

Place in covered roasting pan, rub in spices. Cover, refrigerate overnight if possible, if unable to do that it will still taste delicious.
When ready to cook, stuff cavity with onions and roast uncovered at 250 for 5 hours. Baste occasionally after 1st hour.(You will get a little juice if you tilt the pan, the juices will come, be patient) Ignore timer if bird has one. Let rest before carving. Discard onions.
    Hope you like it.

That Roast Sticky Chicken sounds great !
You can season it.... wrap it in foil, and bake..... It's very easy and a whole chicken makes a nice presentation for dinner...

I crockpot mine and make chicken and dumplings or chicken and biscuits and serve over mashed potatoes or amish noodles.
I haven't made it in awhile, but it's good.
It's a bit of work to debone, but well worth it.

Sara, thats what I often do with mine as well. I put it in the crockpot early in the morning, put some seasoning on it and when its well cooked, I then make dumplings.

I stuff mine with a chopped onion, season with lemon pepper and cook at 350 degrees for 1 1/2-2 hours. The kids and dh love it!

I'd have to do Roast Sticky Chicken- when I first saw the recipe I really didn't think my family would like it. Then we tried it. It is now THE most requested recipe I have- it's better than I can describe.

I would roast it with vegetables inside and throw the left overs bones and all into a pot to make stock with the vegetables. you could get a couple of meals out of it.

    Sticky chicken is the best

I also just throw it in the oven with some Mrs. Dash and bake it
