Baking Club: July's theme- Picnic and Potluck

Something I usually take to a bbq that is simple is Cucumber and Tomato Salad.
It is a simple as the name.
2 cucumbers peeled and sliced
1 tomato sliced (like you were making a regular lettuce and tomato salad.)
1 bottle of Italian dressing
*DH adds sliced onions to his when he makes it. (I don't like onions much, so I don't)
Mix both up in a bowl and then pour the dressing over them. I like to put mine in the fridge for a little while after cutting it up.

Corn Slaw.......
Ingredients:
1-16 package of frozen corn,
1/2 cup finely diced red bell pepper(optional, it's just for color)
1 cup Slaw dressing.
Slaw dressing:
3/4 c. mayonnaise or salad- dressing,
1/4 c. vinegar,(red wine, apple cider or white)
1/2 tbsp. mustard,
2 tsp. sugar,
1 tsp celery seed,
Combine ingredients; beat until smooth. Cover, chill.
1/2 tsp. salt,
How to Prepare:
Add dressing to WELL DRAINED, thawed, corn, stir in diced bell pepper, chill for 2 hours or until served

Confetti Salad
Ingredients:
Radishes,
Carrots,
Celery,
Cucumber,
Califlower,
Broccoli,
Or any fresh crunchy veggie,
Viva Italian dressing or your favorite Vinaigrette
How to Prepare:
Dice all veggies, maranade in your favorite dressing & chill at least 3 hours.
May also be shredded like a slaw for a different texture.

This is an awesome dessert.........
Strawberry jello cake....
I haven't made it since last summer and can't remember the exact measurements . But this is very easy and doesn't really require any......
you need.....
1 sponge cake, angelfood cake or shortbread bake......
strawberry jello.........
fresh strawberries....
coolwhip........
Tear cake into small pieces (about 1 to 3 inches) place in a cake pan, bundt pan or jello mold, slice in fresh strawberries and toss to mix. Pour over prepared, cooled but NOT set jello...... put in fridge til set...... slice and serve with coolwhip..... It's very light and refreshing........

Kirk's Barbecue Rub
2 Tbs salt
2 Tbs sugar
2 Tbs brown sugar
2 Tbs ground cumin
2 Tbs chili powder
2 Tbs black pepper -- freshly cracked
1 Tbs cayenne pepper
4 Tbs paprika
Mix ingredients together. Rub onto ribs.
This is from DH friend. This rub is DELICIOUS!

Fresh Strawberry Pie
1 graham cracker crust
3 Tbsp cornstarch
3/4 cup sugar
1/4 cup water
4 cups sliced strawberries
1/2 tsp lemon juice
Cool whip for garnish
In a saucepan, combine cornstarch, 1/2 cup of the sugar, water, and 2 cups of the strawberries. Bring to a boil, stirring constantly, until thickened and clear. Add remaining sugar; stir until dissolved. Stir in lemon juice and remaining strawberries. Turn into pie shell and refrigerate until firm. Serve with Cool Whip.

Super Simple S'Mores
The kids at our potlucks love these (so do the adults)
3/4 c. corn syrup
2 T. margarine or butter
1 pkg. milk chocolate chips (2 cups)
1 t. vanilla
1 pkg. (12 oz) Golden Grahams cereal - 9 cups
3 c. miniature marshamllows
Grease rectangular pan, 13x9x2 inches. Heat corn syrup, maragarine and chocolate chips to boiling in 2-quart saucepan, stirring constantly; remove from heat. Stir in vanilla. Pour chocolate mixture over cereal; toss until completely coated with chocolate. Stir in marshmallows, 1 cup at a time.
Press mixture evenly in pan. Let stand at room temperature at least 1 hour until firm. Cut in to 2-inch squares. Store loosely covered at room temperature up to 2 days.

Mexicana Dip
1 can refried beans spread to cover a cookie sheet
sprinkle with a package of dry taco seasoning
Then layer on top the following:
shredded cheese
chopped black and green olives
chopped onions
chopped tomatoes
top with sour cream and more shredded cheese
I like to refrigerate overnight
Serve with tortilla chips
There is never any left.

So many mouthwatering recipes! Thanks everyone.
Here's one for a salad that always gets eaten right up. May substitute lower fat turkey bacon, dressing & s. cream.
Bacon Ranch Pasta Salad
1lb pasta (shells, elbows, mini penne etc) cooked & drained
1/3 package bacon, cooked & crumbled
3/4 c. ranch dressing
1/4 c. s.cream
3 green onions, sliced thin
1/2 tsp garlic powder
1T parsley
1/4 tsp. blk. pepper
Mix all together and chill well.~*Darlene*~
