Colorful Veggie Bake
COLORFUL VEGGIE BAKE
3 cups frozen mixed veggies (thawed and drained)
6 plum tomatoes chopped and seeded
2 cups chopped zucchini or squash or combo of both.
1-1/2 to 2 cups fresh or frozen green beans
(If you don't like beans you can use 4-5 cups of the frozen veggies instead or add more zucchini or tomato)
3 cups shredded cheddar cheese
1 cup biscuit/baking mix
1/2 teaspoon cayenne pepper
6 eggs
1 cup milk
Place the veggies in a 13x9x2 baking dish. Top with cheese. In a bowl combine biscuit mix, cayenne pepper, eggs and milk until moist (add salt if desired). Pour over veggies.
Bake uncovered at 350 for 50-60 minutes or until a knife inserted in the middle comes out clean. Let stand for 10 minutes before serving.

Mmmm, Kathryn this sounds good, but might I add that one should say "BAM" when adding the cayenne pepper, it adds flair!
I have all this stuff, even the squash, I think I will make it, Nicole is home and is a veggie eater.

Enjoy, I don't get to make stuff like this much because Joe isn't a veggie eater.
I may try to see about halfing it and just having it for myself one day when he is working.
