Vegetable Slaw
This is very tasty and has no mayonaise and very little fat
6 cups total of a selection of the vegetables below in a proportion that pleases you, shredded or grated
cabbage (red, green or both)
carrots
celery
peppers
onions
Dressing
1/4 cup canola or vegetable oil
1/2 cup cider vinegar
2 tsp honey, sugar or equivalent amount of other sweetner
1/2 to 1 tsp salt
black pepper to taste
dash of cayenne pepper to taste (optional)
1/2 tsp dry mustard powder
Combine and toss with the shredded vegetables. Refrigerate for at least two hours. This gets better after a day and it keeps for a week.
