Family get togethers.:)

What recipes do you or someone else have to prepare to make your family get togethers special ? You know... the ones that everybody begs you to make.:) Please share yours with us. :lip:

ORIENTAL SALAD

1 head lettuce, chopped
1 bunch green onions, clised
Ramen noodles (oriental noodle soup)
blanched almonds, toasted in butter

Dressing:
1/4 c. oil
3 T. vinegar
1 T. sugar
1 t. salt
1/2 t. pepper
noodle seasoning packet

Mix dressing and pour over lettuce, onions and almonds. Sprinkle with crushed noodles. (I do this right before serving- otherwise it gets soggy)


CLOUD PIES

5 T lemon juice
1 can sweetened condensed milk
1 (16 oz) can crushed pineapple, drained
8 oz. whipped topping
1 1/4 c. chopped pecans
1 8-inch graham cracker pie shells

combine lemon juice and condensed milk in bowl; mix well. add p ineapple, whipped topping and pecans; mix well. Spoon into pie shells, Chill until serving time. Makes 16 servings


FRIED CHICKEN

Dip cut up chicken pieces in buttermilk- then dredge in flour mixture of 1/4 c. flour, 1 t. paprika, 1/2 t. salt, 1/8 t. pepper (for each 1 lb chicken). Allow floured chicken to rest until the flour becomes pasty.

Heat oil, shortening or lard in a skillet until a drop of water sizzles in it.

Add chicken (meaty pieces first). Turn pieces to brown evenly. When uniformly light brown, cover, reduce heat, and fry slowly until tender- 30 to 60 minutes depending on size. Turn often.

PARTY POTATOES

8-10 potatoes
1 c. sour cream
1 (8 oz.) pkg. cream cheese
1 stick oleo

cook as to mash the potatoes; mash with the cream cheese and sour cream. Place in greased baking dish. Pour the melted oleo on top. use 9x13-inch pan. Bake at 350 degrees for 30 minutes. This can be made the day before and refrigereated.

Not your Average BANANA PUDDING DESSERT

2 bags Pepperidge Farm Chessmen Cookies
6-8 bananas, sliced
2 cups milk
1 (5 oz.) box instant French vanilla pudding
1 (8 oz.) package cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1 (12 oz.) container frozen whipped topping, thawed, or an equal amount sweetened whipped cream

Line bottom of a 13x9x2 inch dish with 1 bag of cookies and put bananas on top. Blend milk with pudding mix well with a handheld electric mixer. Beat cream cheese and condensed milk together in a bowl until smooth; fold in whipped topping. Add to pudding mixture, stirring until well blended. Pour mixture over cookies and bananas; cover with remaining cookies. Refrigerate.

Serves 12 :hungry:

Ham Roll-ups

8 oz. pkg cream cheese
1 jar dill pickle spears
12 oz. cooked ham (rectangle shape)

Take cream cheese out of the fridge for a bit to warm it up so it's easier to spread. Spread cream cheese on 1 slice of ham. Lay a pickle (shake off excess juice) on the short side of the rectangle. Roll it up! Put toothpicks into the roll-up about every 1". Slice with sharp knife. If you chill the roll-ups before slicing, it makes it easier to slice.

Kalua Pig in the crockpot.

Take one large pork butt roast, rub with about 2 tablespoons of kosher salt and some liquid smoke and pop it into your crockpot. ad about 2 cups of water and cook on low for 8 hours. Shred when done and serve with rice. Tastes like the Kalua Pig they do in the imus (cooked in the big sand pits) in Hawaii!

SEVEN LAYER DIP
In a baking dish, spread/layer the following in this order:
16 oz can of refried beans
2 cups shredded cheddar cheese
½ cup black olive slices
1 large tomato, diced
16 oz container of sour cream
16 oz container (or homemade!) guacamole
2 cups of your favorite salsa
chill for at least an hour before serving with tortilla chips!



SOUR CREAM CUKES
4 large cucumbers, peeled & sliced thin into rounds
16 oz container of sour cream
¼ cup of apple cider vinegar
salt....

Lightly salt cucumber slices in a bowl...set aside...
Mix sour cream & vinegar well...
Once blended, pour over cucumber slices and chill well before serving!



BEER BAKED POTATOES
12 good sized russets, skin on, scrubbed thoroughly & diced, layered into bottom of a baking dish...
Top with the following:
12 oz can of beer
16 oz bottle of cranberry juice
1 stick of butter (cut into "slices/pats")
salt & pepper to taste

Bake on 375° for a good hour or until potatoes are soft & most of the liquid has been absorbed!



CHEESE DIP
(this is actually our SuperBowl standard!!)
1 lb ground beef, browned (with cumin, salt, pepper, & onion) & drained
1 brick Velveeta
1 16oz jar Ortega Thick & Smooth Taco Sauce

Melt cheese with taco sauce until smooth....
Stir in browned ground beef...
Heat until throughly, thoroughly hot....(I keep mine in my crockpot)
Serve with tortilla chips!



ANGEL FRUIT COCKTAIL
(this is yummy! :lip: )
(please note that you must be *V*E*R*Y* specific with your measurements!! :toothy: )
two cans of fruit cocktail (reserve juice/syrup to use in your jello)
an angel food cake
two boxes of jello (whatever flavor you prefer!)
one bag of coconut
a couple of cups of your favorite nuts

make jello according to box directions, substituting the fruit juice for water - chill just until starting to set...
mix fruit cocktail, nuts, & coconut - set aside...
tear angel food cake into bite size chunks in bottom of large glass pan....
spoon fruit cocktail/nuts/coconut mixture over cake....
pour almost jelled jello over the whole shooting match....
and refrigerate for several hours before serving.....



POTATO CAKE
(this is my family's "secret recipe" and is a definite crowd pleaser! TRUST ME ON THIS!!)
4 egg yolks (beat whites and set aside)
1 cup buttermilk
1 cup butter
2 cups sugar
1 cup raisins
1 cup chopped nuts
1 cup mashed potatoes
2 cups flour
4 tsp cocoa
1 tsp baking powder
1 tsp cinnamon
½ tsp ginger
½ tsp baking soda
½ tsp salt
mix the above together well and fold in egg whites....
bake at 350° in Bundt pan for 1½ hours....
cool well & turn out onto plate....
mix the following together well & spread on cake:
½ lb softened butter
1 tsp vanilla
1 TBL brewed coffee
1 lb confectioner's sugar
delicious!!! :lip:



As you can see, my family couldn't care less about fat grams or cholesterol!!
