Thanks so much for posting this...I'm always looking for more inexpensive ways to feed my family...I can use these tips for planned overs also!

1) Rice pudding in less than 30 minutes!
•2 cups cooked rice
•1/2 cup sugar
•2 eggs beaten
•2 cups milk
•1/2 tsp. vanilla
•1/4 cup raisins
•1/2 tsp. cinnamon
Mix all the ingedients in a bowl, pour into greased baking dish or pan and bake for about 25 minutes in a 350 degree oven.
2) Shepherds Pie...instead of a layer of mashed potatoes use rice.
3) I always add rice to soups (HM or canned)...creamy soups too like cream of mushroom or tomato which we really like!

We use a lot of rice at our house, due to dd's wheat problems - so these are great for variety. Thanks

to the poster who asked about doing the same w/ couscous or pasta, yep....all good! we do alot of these w/ whole wheat couscous as dd loves it!

My favorite thing to do with rice is saute it with some oil and then add an egg and stir. Once the egg is set pour onto plate. Makes the rice nice and creamy. Sometimes I will add some soy sauce. Basically a fried rice.

We always use brown rice and sometimes serve as dessert with almond milk, cinnamon, and a little brown sugar. For savory rice, we often mix brown rice with a can of rotel and some sauteed shrimp and top with cheese.
