What are your fav summer dessert recipes?
I love fruit salad and smoothies, but am always looking for some new tasty summer desserts.

I don't make anything special for the summer, occasionally a scoop of icecream on a belgian waffle, otherwise its just lots of seasonal fruits, especially melons and blueberries.

I don't know if it's my FAVORITE or not...cuz I have so many....but here's one that always goes over big. Forgive me if it's a repeat....
Frozen Oreo Cake
1 pkg. oreo cookies (crushed)
1 stick oleo (melted)
1 pkg. of whipped topping (softened--to spreadable)
Some chocolate syrup
1 pkg. slivered almonds
1 1/2 gal. (cheap!) vanilla ice cream (softened)
Place crushed oreos in bottom of metal cake pan. Drizzle melted oleo over and mix and then pack down. *Now this is where it gets technical!* SMASH the softened ice cream on top of the oreos. Drizzle chocolate syrup over, not too much though. Spread whipped topping over this, add some more choc. syrup and slivered almonds. Freeze and then watch it disappear when you take it out and cut it up! Bon Appetit`

I love ice cream or Jello in the summer. Especially, root beer floats! Anything cold and not too rich or heavy.

This is what I make after a morning of picking fresh strawberries at a UPick farm.
Fresh Strawberry Pie
1 9 inch graham cracker crust
3 Tbsp cornstarch
3/4 cup sugar
1/4 cup water
4 cups sliced strawberries (try slicing with a metal egg slicer-so easy!)
1/2 tsp lemon juice
Cool Whip for garnish
In saucepan, combine cornstarch, 1/2 cup of the sugar, water and 2 cups of the strawberries. Bring to a boil, stirring constantly, until thickened and clear. Add remaining sugar, stir until dissolved. Stir in lemon juice and remaining strawberries. Turn into pie shell and refrigerate until firm. Serve with Cool Whip.
This is very easy, takes no time at all, and no oven to heat up the kitchen! Enjoy!

Sara,
Here is one that is easy and cool for those hot days:
Layer ice cream sandwiches in casserole dish (or whatever square/rectangular pan that's handy)
Cover them with cool whip (also chopped nuts if it suits you)
Repeat the ice cream and cool whip layers
and then drizzle (I heavily drizzle) chocolate syrup over the top
Freeze until firm
Slice and eat
Tastes like a ice cream sunday or ice cream cake
You can add whatever fruit you want to the layers to dress it up

Geez, I must be boring! Nothing tastes better than a huge piece of cold watermelon (seedless, of course!) to cool me down!!

Has anyone tried that pretzel cool whip pineapple salad dessert?
I'll try and find the recipe and post it.
edited to add recipe:
1 Cup Crushed pretzels
1/2 Cup butter or margarine, melted
1 Cup sugar, divided
1 package (8oz) cream cheese
1 can (20 oz) Crushed or chunk pineapple, drained
1 carton (12 oz) Cool Whip, thawed
In a bowl, combine pretzels, butter and 1/2 cup sugar. Press into 13 X 9 baking pan and bake at 400 degrees for 7 minutes. Cool. Meanwhile, in a mixing bowl, beat cream cheese and remaining sugar until creamy. Fold in pineapple and cool whip; chill until serving. Break pretzel mixture into small pieces and stir into pineapple mixture just before serving.

What is the name of this one? I used ot love this one a lot at picnics.
1 15-20 oz can crushed pinapple (do not drain)
1 frozen whip topping (thawed)
1 pkg pistachio pudding mix
1 cup mini-marshmallows (optional)
How to Prepare:
Combine pudding mix and pineapple in bowl. Add Cool Whip and mix until well blended. Add marshmallows if desired and mix well. It should be light and fluffy when finished. If not, I always add more whip topping. 1 (18-oz.) pkg. Pillsbury® Refrigerated Sugar Cookies
1 (8-oz.) pkg. cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
1 cup fresh or canned peach slices, drained, cut into thinner slices
1 cup halved or quartered fresh strawberries
1 cup fresh or frozen blueberries
1/2 cup orange marmalade, heated
Prep Time: 20 Minutes (Ready in 1 Hour 50 Minutes)
Preparation Directions:
1. Heat oven to 350°F. Slice cookie dough as directed on package. Arrange slices in bottom of ungreased 15x10x1-inch baking pan or 14-inch pizza pan. Press dough evenly in pan, using floured fingers if necessary.
2. Bake at 350°F. for 11 to 16 minutes or until golden brown. Cool 15 minutes or until completely cooled.
3. In small bowl, combine cream cheese, sugar and vanilla; beat until fluffy. Spread mixture over cooled cookie crust. Arrange fruit over cream cheese.
4. Spoon or brush warm marmalade over fruit. Refrigerate at least 1 hour before serving. Cut into squares or wedges. Summer desserts Hmmm well I like fruit salads & jello with cool whip or with pudding. I want a fast dessert so I don't have to be inside. We like chocolate pie, strawberry shortcake, pink fluff anything like that.

Fresh Peach and Yogurt No-Bake Pie
You serve it chilled.
3 tablespoons cornstarch
3/4 cup fruit juice
1/4 cup honey
grated peel of one lemon
1 tablespoon fresh lemon juice
6 fresh peaches, dipped briefly in boiling water, peeled, and chopped into bite-size pieces
1 teaspoon pure vanilla extract
1 cup yogurt or sour cream
1 walnut crust (see below), or premade crust
Mix cornstarch, fruit juice, and honey in a pan. Turn heat on to medium-high and bring to a boil, boiling until thick and clear, around 5 minutes.
Add lemon juice and peel and mix to combine.
Place diced peaches in premade pie crust and pour honey-lemon sauce over peaches.
Chill. Before serving, mix vanilla (and some honey or other sweetener, if desired) into yogurt or sour cream and gently spread on pie.
Serves 6 - 8.
Walnut Crust
1 cup whole wheat pastry flour
1/4 cup chopped walnuts
1/4 teaspoon baking powder
1/4 teaspoons salt
2 teaspoons cinnamon
2 tablespoons honey
3 tablespoons vegetable oil
Combine dry ingredients. Gradually add honey and oil, mixing well. Press mixture into a buttered 9-inch deep-dish pie plate.
Bake at 350F for 12-14 minutes, or until golden brown. Allow to cool before using.

Rhubarb Coconut Cobbler
1 (4-serving-size) package sugar-
free vanilla cook-and-serce pudding
mix
1 cup unseetened orange juice
2 cups chopped fresh or frozen rhu-
barb,thawed
1 cup plus 2 tablespoons reduced-
fat biscuit baking mix
1/3 cup fat free milk
2 tablespoons fat-free sour cream
1 and 1/2 teaspoons coconut
extract
3 tablespoons flaked coconut
Preheat oven to 400 degrees.
Spray an 8x8x2 inch baking dish
with butter-flavored nonstick
cooking spray.
In medium saucepan,combine pud-
ding mix and orange juice.
Stir in rhubarb.Cook over medium heat until mixture thickens and starts to
boil,stirring often.Spread in
prepared dish.
In large bowl,combine biscuit
baking mix,milk,sour cream and
coconut extract.
Drop batter by tablespoonfuls to form 6 mounds
on top of rhubarb filling.Evenly
Sprinkle coconut over top.
Bake for 25-30 min,or until done.
Cool on a wire rack for 5 minutes before
serving.
Serves 6.

I love fruit salad
a few red apples diced up (you can leave on the peeling for color)
a few oranges, tangerines, etc cut up
a few banana's cut up (I add them right before I eat it so they don't brown in the fridge)
raisen's
a spoonful of either mayonaiss or plain yogurt to coat it a little
I also add (if I have it on hand) a little bit of OJ it helps the fruit to not brown as quick.
My grandmother would add chopped pecans to hers until she found out I was allergic to them and couldn't eat a lot so she started putting them on the side for everyone else to still use.
