ISO chicken legs/thighs recipes
How do you prepare chicken legs/thighs? I usually buy whole chickens or split breasts, but I am looking for some great ways to prepare legs/thighs.
Any suggestions?

I usually bake skinless chicken thighs with potatoes cut up in the same baking dish. Add a bit of olive oil, garlic, parsley and either baby carrots, big chunks of onion or green pepper and bake 'til the chicken is done and potatoes are soft. Done-easy-one dish.

I often bone the thighs and use the meat just the same way I would the boneless, skinless breasts.
I often put the whole pieces (not boned) in the Crock Pot and cook them in a bit of broth. I then bone them and use the meat in chicken salad, tacos, etc.

My hubby loves it when I make drunken chicken (don't worry, the alcohol burns off!).
I leave the skins on, but I lift the skins a bit and rub the meat with some marjoram and pepper. In a baking dish, I mix 2 cups white wine and 1 cup tequila. I put in the chicken, and add some olives and a cut up onion. Cover with aluminum foil and bake at 350 for 1- 1 1/2 hrs. I usually serve it with veggies.
Also, if I have some speghetti sauce, I'll simmer the legs and theighs in it on the stove to make chicken cacciatore (it doesn't work in the crock pot, the sauce gets too watery). I serve that with speghetti.
Then, of course, nothing tastes better than chicken on the grill!!

I put mine in the crockpot. We eat the chicken and I save the broth and little bits of chicken that have fallen off the bone to make chicken and rice. It is richer if you use dark meat chicken. I put the broth (I do not add water to it when I cook it in the crockpot), twice as much water, carrots, salt, black pepper,onions, parsley flakes and rice. I usually do not like chicken and rice but this is good and the kids like it too. The best part of it is I have made 2 meals with very little work. I just picked up 10 lbs. of leg quarters this weekend for $1.50!!!

I put the thighs into my crockpot with some water, a can of italian stewed tomates..and then about a couple hours before it's done I add in some rice and when it's done I have a whole dinner ready

Ok except for the bread and salad
