I need a quick, frugal, yet delicious breakfast meal for a potluck, HELP!
Our Bible study group has just finished one study book and we are getting ready to start another. Whenever we finish a book we have a "party"-type morning to kind of put a break between the last study and the new one. We have decided to have a potluck breakfast party, and it is TOMORROW!
I am looking for a very fast, very frugal, yet very delicious breakfast-y type food to bring. I am 3 days away from payday so my budget is limited but I want to bring something nice that everyone will love.
I've been racking my brain to come up with something all week but I guess I am just braindead right now, LOL
Any ideas? Thanks!

Gingerbread waffles- not sure if you have access to an oven to heat these in.
These waffles are just plain fantastic. I adore them with homemade peach-pear jam or apple butter, but they are great with just about any topping. They also freeze well and can be thawed by popping them in the toaster for a delicious breakfast in minutes. The recipe can be doubled or tripled with good results.
2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar
1 teaspoon ground ginger
1/2 teaspoon cinnamon
Dash cloves or allspice
2 eggs
1 1/2 cups buttermilk
1/3 cup unsulphured molasses
1/4 cup vegetable or canola oil
Whisk together the dry ingredients in a large bowl and set aside. In a small bowl beat the eggs well. Beat in the buttermilk, molasses, and oil until well blended. Make a well in the flour mixture and add the wet ingredients. Mix until just barely combined. Pour the batter into a hot greased waffle iron and cook.
Makes 6 large waffles.

Ham and Cheddar baked eggs
This elegant dish is quick and easy to make. I like baking eggs in the oven as it allows you to run off and do other things, while cooking eggs on the stove oftentimes requires some attention. Baking the eggs also allows you to add additional flavor and ingredients which is hard to do on the stove. This recipe combines the classic combination of Cheddar cheese and ham for a simple and filling breakfast.
The ingredients listed below are for one serving, the recipe can be doubled or multiplied as many times as you need.
1 tablespoon butter
2 tablespoons grated Cheddar cheese
3 tablespoons minced ham
2 eggs
Salt
Freshly ground black pepper
Preheat the oven to 325 degrees. Heavily grease a small individual casserole dish or ramekin (flatter is better) with half the butter. Sprinkle the Cheddar cheese in the dish, tilting the dish to coat the buttered sides with the Cheddar. Carefully break the eggs into the dish. Sprinkle with salt and pepper to taste. Dot with the remaining butter. Bake for 12-18 minutes, or until the eggs are cooked the way you like them.
Makes 1 serving.

Poppy Seed Bread
1 1/2 cups sugar
1 cup butter or margarine
3 eggs
1 1/2 tsp. almond extract
1 1/2 tsp. vanilla
3 cups flour
1 1/2 cups milk
1 tablespoon poppy seeds
1 1/2 tsp. baking powder
1 1/2 tsp. salt
Preheat 350 degree oven. Combine sugar, butter, eggs, and extracts. Mix
on medium speed, scrape bowl often until light and fluffy, 2-3 minutes.
Add remaining ingredients. Beat 1-2 minutes more until mixed. Pour into
bundt or tube pan. Bake 50-65 minutes until done. Cool 10 minutes.
Sprinkle with powdered sugar. Slice into medium thin pieces and place on
serving plate for guests.

Pistachio Bread
1 yellow cake mix
1 box instant pistachio pudding
1/4 cup oil
1/2 pint sour cream
4 eggs
1/4 cup water
Mix all ingredients with a mixer until blended. In another bowl mix
these ingredients:
1 cup brown sugar
1 cup crushed walnuts or pecans
1 tsp. cinnamon
Great Breads
This makes two loaves. Preheat oven to 350 degrees. Butter pans. Start
with a layer of the bread mixture, then sprinkle on the nut mixture,
another layer of bread mixture, and at the end sprinkle the top with the
nut mixture and marble it all with a knife through the batter. This does
not have to be exact as far as the layers as long as you distribute it
in both loaves and then marble. Bake for one hour; or when toothpick
comes clean.

Coconut Bread
1/4 lb. butter or margarine
1 cup sugar
2 eggs
2 tsp. coconut extract
8 oz. sour cream
1 cup coconut
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
Cream together butter and sugar. Beat in eggs and extract. Mix in sour
cream. Add coconut and mix well. Stir flour, baking powder, and baking
soda together. Add to batter, mix well. Put batter into lightly greased
loaf pan and bake at 350 degrees for 45 to 50 minutes until done.

Milk and Honey Bread
1/2 cup honey
1 cup milk
3 tablespoons melted butter
1 1/2 cups flour
1/2 cup sugar
3 tsp. baking powder
1 tsp. salt
3/4 cup chopped pecans
1 egg, beaten
Preheat oven to 350 degrees. Butter loaf pan. In medium saucepan,
combine 1/2 cup honey and milk, Stir over medium heat until honey
dissolves. Stir in melted butter. Set aside to cool. Sift flour, sugar,
baking powder and salt into large mixer bowl. Add pecans and toss to
coat. Set aside. Whisk egg into cooled milk mixture. Add to flour
mixture. Beat at medium speed just until blended. Pour into pan and
smooth top. Bake for 65-75 minutes until toothpick comes clean from
center. Cool on rack 10 minutes, Remove and cool again on rack.

Applesauce Date-nut Bread
3/4 cup chopped walnuts
1 cup chopped dates or raisins
1 1/2 tsp. baking soda
1/2 tsp. salt
1 cup applesauce
3 tablespoons oil
1 1/2 cups flour
1 cup sugar
2 eggs
1 tsp. vanilla
In large bowl, mix nuts, dates, baking soda, salt, applesauce and oil,
and let stand 20 minutes. Add the flour, sugar, eggs and vanilla and mix
well after it rests. Pour batter into sprayed 9x5 loaf pan, and bake 1
hour or until knife comes clean. Cool 10 minutes and remove. Make 1
loaf.
7 grams fat, 17 milligrams cholesterol.

Herb Bread
1 1/3 c. water
3 Tbsp. dry milk
1 1/2 tsp. salt
3 Tbsp. sugar
3 Tbsp. shortening
3 3/4 c. white bread flour
1 1/2 tsp. each dried basil, oregano and thyme 2 tsp. yeast
Measure ingredients into pan in order given for your bread machine
instructions. Put on the 2 pound setting.

Cheese and Chive Bread
Makes 1-1/2 pound loaf
2/3 cup (5-1/2 ounces) water
2 tablespoons oil
1 tablespoon honey
1 cup (4 ounces) shredded cheddar cheese 2 large eggs
3 1/2 cups bread flour
1/4 cup powdered milk
2 tablespoons dried chives or 1/4 cup fresh snipped 1/2 teaspoons salt
2-1/2 teaspoons active dry yeast
Put all the ingredients in the inner pan in the order your machine calls
for. Select 1 1/2 pound setting.

How about baked oatmeal? This one is from Cooking Light and is good except a little sweet. I would recommend if you make it to lessen the amount of brown sugar personally unless your group has a sweet tooth.
Baked Oatmeal
2 cups uncooked quick-cooking oats
1/2 cup packed brown sugar
1/3 cup raisins
1 tablespoon chopped walnuts
1 teaspoon baking powder
1 1/2 cups fat-free milk
1/2 cup applesauce
2 tablespoons butter, melted
1 large egg, beaten
Cooking spray
Preheat oven to 375°.
Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.
Yield: 5 servings (serving size: 2/3 cup)

Hello ladies

I decided on 2 different kinds of muffins, because they are easy to eat and not messy.
There were so many great goodies there!
Thank you for the great ideas...I have copied them to use later here at home and for other potlucks!

Sandy, I liked it other than the sweetness, and the rest of the family did too. We are fans of regular oatmeal rather than the flavored ones typically so I would make it again with less sugar. Otherwise, we loved it.
