I've done the chicken enchilada in the crockpot, but I have a crockpot I hate so I don't use it often. (That is one of the things that will be on my list next weekend for the village sales.)
The enchilada soup is very thick, and I left it in the crockpot to keep it warm duing a Superbowl party. The bottom got a bit burned, but nobody minded, as it was only a bit brown and tasted good.

Well, without the masa harina, the enchillada soup was rather thin. DH added hot salsa to his. I added sour cream to mine.
