    Default delicious ANZACs

    This is a delicious tried and true cookie recipe which can be made using things that are usually in your pantry.  They're called ANZAC (Australian and New Zealnd Army Corps) biscuits/cookies and were originally made by wives and sweethearts to send to our troops who fought in Europe during WW1. 

    ANZAC BISCUITS/COOKIES

    • 1¼ cups of rolled oats
    • 1 cup all purpose flour
    • 1 cup dried coconut
    • ¾ cup sugar
    • ¾ teaspoon cinnamon
    • ½ cup butter
    • ¼ cup water
    • 2 tablespoons syrup, molasses or honey
    • 1 teaspoon bicarb soda


    There are 4 simple steps:

    1. Preheat oven to 160C. Line baking trays with non-stick baking paper.
    2. Combine oats, flour, coconut, sugar, cinnamon in a large bowl and stir.
    3. Combine butter, water, syrup in a small saucepan over medium heat.  Cook until the butter melts and everything is combined.  Remove from heat and add bicarb soda.  This will cause the mixture to bubble up.
    4. Stir the butter mixture into the dry ingredients. Mix well. Roll tablespoons of the mixture into balls and place on trays, allow room for spreading. Bake 2 trays at a time for 18 minutes.  Allow to cool on the tray for a few minutes before removing to a wire rack to cool.


    These biscuits are chewy.  If you want them crisper, allow 2 extra minutes cooking..

    They sound yummy, I am going to try them when I get off my 6 Week Curves Challange diet... I see alot of carbs here...lol..

    And for those of us using ºF, 160ºC = 320ºF, and sodium bicarbonate is baking soda.
