Turkey Jelly?!!!
Ok, I need an answer quick, because if this fails, I'll cry.
I boiled down a turkey and to get the fat to rise to the top of the broth, I put it all in the fridge. Well, I just took it out to scrape the fat off and I have turkey jello!!!
Ew ew ew!!! Grrrrrrrrrrrrrrrrrrrr! 
Please, someone tell me if I leave this sitting out overnight it will de-jello-ify itself!!!

It should liquefy whenever you heat it. But don't let it sit out overnight! You'll get food poisoning if you do, and then you eat it. When you're ready to use it just put it in a pan and warm slowly like you're melting butter.

Phew! Ok, crisis averted. I warmed up the broth til it was ungellified and now I have it in my freezer. I also have a pot of pea soup on the go overnight, too!

K, enough excitement for one day. I'm going to bed.

The jell-ing is perfectly normal.

That is a sign of really good homemade stock!
The bones leach protein into the broth as it cooks, that's what causes the jelling. Jell-O is made from bone extractitives.

Nada, I've done that over the years!!! sometimes it means theirs more grease in it form the meat then water. Thats what I find anyway.
