How about tater tot casserole substituting the obrien potatoes for the tots?
I use cream of mushroom soup & sometimes add some cheddar on top of potatoes.

You could make pasties.
Crescent rolls, into rectangles instead of triangles...filled with diced hashbrowns, ground beef, beef boullion, and maybe a little shredded cheese. YUMMY!!Total Debt Paid Off $92,234

If you run out of ideas and the potatoes start to go bad, I recommend make mashed potatoes and freeze them. They come out with the consistency of mashed potato flakes and make excellent thickeners in soups, stews, chowders, etc. I loooooove frozen mashed potatoes. I always make too many intentionally for that reason.
