YUMMY! Made cole slaw with KFC recipe!
Hubby was in HEAVEN last night, the way to his heart IS through his stomach and one of his all time favorites is KFC cole slaw so I found a copy cat recipe online:
1/8 c. vinegar
1/4-1/2 cup sugar
1/2 c. salad dressing (used the aldis version of miracle whip)
1/8 c. veggie oil
1/2 tsp. salt.
Just mix all together really well and then pour over your shredded cabbage!
He just LOVED it! Good thing I'm growing a lot of cabbage for him this year

Oh you're an AMBITIOUS WOMAN!! Cole Slaw for 100? One thing that could make it REALLY easy is if you have any friends/family that work at a bakery, pizza restaurant or deli maybe you could get them to let you use their mixer attachment to shred the cabbage. I used to work at a pizza place and the attachment for the hobart mixer could cut a 5 gallon bucket of onions or green peppers in no time at all! I'm just envisioning how TIRED my hands/arms would be shredding that much cabbage! I use my grandmas hand held slicer that sits over a bowl.

I make homemade coleslaw all the time. My dressing is very simple:
1/2 cup mayo
1 tablespoon of sugar (or more if you like it sweeter)
1 tablespoon of cider vinegar
1/2 teaspoon of celery seed
It is really good, and I use the "light" mayo most of the time. That cuts the calories in half.
