Receipe using dryed cranberries
I was looking through my freezer and found a package of dried cranberries I had forgotten about buying. Does anyone have a receipe for some sort of quick bread or cookies using dried cranberries?

Apple Cranberry Muffins:
4 tablespoons butter or margarine
1 egg
1/2 cup sugar
grated rind of 1 orange
1/2 cup orange juice
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1/4 teaspoon salt
1-2 apples
1 cup cranberries
1/2 cup walnuts, chopped
confectioners' sugar, for dusting (optional)
1. Preheat oven to 350. Grease a 12 cup muffin pan or use paper liners.
2. Melt the butter or margarine over gentle heat. Set aside to cool.
3. Place the egg in a mixing bowl and whisk lightly. Add the melted butter or margarine and whisk to combine.
4. Add the sugar, orange rind, and juice. Whisk to blend, then set aside.
5. In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, ginger and salt. Set aside.
6. Quarter, core and peel the apples. With a sharp knife, chop in a coarse dice to obtain 1 1/4 cups.
7. Make a well in the dry ingredients and pour in the egg mixture. With a spoon, stir until just blended.
8. Add the apples, cranberries and walnuts and stir to blend.
9. Fill the cups 3/4 full and bake until the tops spring back when touched lightly, 25-30 minutes. Transfer to a rack to cool. Dust with confectioners' sugar, if desired.

This recipe calls for fresh cranberries, however I have made it with dried and it was fine.
Cranberry Orange Bread
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
grated rind of 1 orange
2/3 cups orange juice
2 eggs, lightly beaten
6 tablespoons butter or margarine, melted
1 1/4 cups fresh cranberries
1/2 cup walnuts, chopped
1. Preheat oven to 350. Line the bottom and sides of a 9x5 inch loaf pan with waxed paper and grease.
2. Sift the flour, sugar, baking powder and salt into a mixing bowl.
3. Stir in orange rind.
4. Make a well in the center and add the orange juice, eggs and melted butter or margarine. Stir from the center until all ingredients are blended, do not over mix.
5. Add the cranberries and walnuts and stir until blended.
6. Transfer the batter to the prepared pan and bake until a cake tester (toothpick or butter knife for me) comes out clean, 45-50 minutes.
7. Let cool in pan for 10 minutes before transferring to a rack to cool completely. Serve thinly sliced, toasted or plain, with butter or cream cheese, and jam.

YOu can add cranberries to the Libby's pumpkin bread recipe you can find on the Libby's website. It is REALLY good pumpkin bread. I make it every fall, however don't have the recipe in front of me. It is on the website though.

What about making a batch of Rice Krispie Treats and adding some dried cranberries and chocolate chips??? Sounds yummy to me!!
