    Default Burned Onions, Bacon and Butter and to Much Parsley Helped Make a Very Good Soup

    I had my son, his wife, a grand-daughter come for the past weekend. They came to see the newest addition to our family. My 2nd son and his wife had a little girl on thrus morning(all is well PTL). I wasn't really perpared and wasn't sure what to fix for meals. Well they are from the south so I made some sweet tea first thing. Then for breakfast i made bacon gravy and biscuits. For lunch I made Potatoe soup with the help of my 5 1/2 yr old grandaughter. As I was cooking the bacon, butter and onions I got busy and they burned. I thought I can't throw this out let's just keep going and see how it turns out. My grand-daughter was helping adding things to the pot an dumped in way too much parsley. well we cooked it and hoped for the best. Well it turned out great! We had homemade rolls too. My daughter brought over a pork encilata pie that she made(yum!!) and I cooked some mac and cheese.And for dessert my grand-daughter and I made a snack cake with choclate frosting. It always amazes me what you can cook when you look around and see what you've got. By the way our potaoes soup was a beautiful green!

    Made my mouth water~! Sounds too good. Glad it worked out for you, when you needed it too especially.

    This southern gal sure wouldn't turn it down! Make sure to follow the same recipe, including the extra parsley, for St. Patty's Day and name it after your granddaughter. ____'s Irish Potato soup! She will love it and you will start a family tradition.
