Turkey pot pie! I always get 2 free turkeys in November (1 from the grocery store for spending over XX amount, and 1 from my employer). Since we don't cook Thanksgiving Dinner here, I make *several* pot pies at once, because they are a mess to make
. It's become an autumn ritual. They freeze really well!

County Fair foods (corndogs, candy apples, funnel cakes, cotton candy), Greens....collards, turnip & mustards, sweet potatoes, pumpkins, boiled peanuts, homemade pork cracklin's, hog head cheese and chittlin's. Like someone else said before, hogs are killed in the fall in the south cause the weather is cooler then, so that's when you have all the good piggy dishes. Granny always made her soap for the year in the fall too, cause she used the rendered fat or lard from the butchered hogs. Even now, the smell of a wood fire outside reminds me of hog butchering time and granny's smokehouse every fall as a kid.
