Hi LizaZ,
I am the initial poster. I was basically seeking answers about making homemade powdered hot cocoa. My mom used to make a big batch of it up when we were younger (instead of buying it in a box with individual packets). I try not to buy anything with hydrogenated oils, if you look, all prepackaged hot cocoa has it. I researched recipes for making it myself yet all I could find were recipes using coffee creamer (which is bad stuff). Coffee creamer contains hydrogenated oils. So, I made mine without the coffee creamer. I think the creamer makes it thicker. When I mix a cup up, I just had half milk and half water. I made a big batch and store it in a plastic container. Though nothing beats hot cocoa on the stove with milk, I was looking for a simple way to make it in the microwave.

Thanks, it seemed that maybe people were talking about two different things. Don't worry, I get confused easily. I just wanted to make sure I had given you the right recipe.
Isn't label reading so hard these days? I've stopped using most processed foods. You wouldn't believe the places where high fructose corn syrup is lurking. That's why I started making my own salad dressing.

I make hot cocoa all too often in the cold months.
It is essential to use the best quality cocoa you can buy. Not Hershey's. Order it from the internet if necessary. www.ChocolateNecessities.com has fabulous cocoa.
Recipe
Put 1/4c water and 1 Tbsp granulated sugar in a big mug. Microwave for 30 seconds to dissolve sugar and heat water.
Add 1 Tbsp or more top quality cocoa. Let sit for 1 minute or less to melt cocoa. Stir with whisk or fork until there are no lumps.
Add 1/4 tsp real vanilla and fill mug with milk. Stir.
Microwave for 1 minute 40 seconds until desired temperature.
Stir.
Enjoy! Yum!

If you want to make a dry mix, combine cocoa, sugar, and vanilla powder.
Make cocoa using my method above.
Real milk needs to be added.
There is no such thing as a terrific hot cocoa made with dried milk, evaporated milk, or dry creamer. Yuck.
