    Armadillo Eggs

    6 (or 10 or 20, etc.) jalepeno peppers
    Cut it half with stem left of, seeded
    1 brick of cream cheese
    thin sliced bacon cut in 1/4 strips
    toothpicks

    After seeding the peppers, spoon each pepper 1/2 with enough cream cheese to fill and wrap with a piece of bacon, secure with toothpick. Cook slowly on grill (we use a foil covered cookie sheet b/c it's so messy to cook) for about 40 minutes or until bacon is cooked. You can also do these in the oven but see above about mess *ugh*. They're delicious as appetizers but very addictive. Beware that you might need to wear rubber gloves if you fix a lot of them as the juice gets under your nails and makes your fingers 'sting' a bit for a day afterwards (could be longer if you're very sensitive). These are always a huge hit.

    I like taking a watermelon and carving it out to make a fruit bowl with assorted fruits. The things I love to see at a picnic or potluck are that green fluff salad(Has pudding, nuts, cherries, maybe whipped cream?)hashbrown casserole,and the taco dip that has the chunks of cheese in it. Yummy!Love picnics.

    Fried chicken, dh's grandma's recipe potato salad, deviled eggs, Betty's salad (a spinach salad with bacon and hardboiled eggs on it and a tangy dressing), and My mom's recipe Snickerdoodles.

    Folks seem to like my Smoky Baked Beans at picnics and potlucks. My recipe is sort of "loose"; you know, adjust to your own liking.

    A couple cans of pork and beans, drained
    A can of chili beans
    A cup or so of brown sugar
    A couple tablespoons of liquid smoke
    Some like to have diced onion in it, but I don't ususally do this.
    Crumbled crisp-cooked bacon

    Combine the beans, sugar and liquid smoke. You can use either a crock pot or cook in the oven. Oven baked makes them a little firmer, and I prefer them baked in the oven. Crocked beans seem to have more liquid on them. When finished, cover with the bacon.

    Picnics at homes I am asked for, potato salad, pasta salad or rice salad, depending on the people.
    For desert I make homemade frosted brownies or recently banana bars that I make in cupcake form.
    Last summer I was asked for my secret hamburger recipe. Not that I knew I had one. lol Here it is no longer a secret. 90% ground beef shaped into patties, and topped with a few sprinkles of, salt, pepper, and garlic powder.
    Some people have been eating far too much ground turkey with no seasonings at all. It's just not the same.

    Greek pasta salad. Add the following to cooked pasta:
    Halved grape or cherry tomatoes
    Diced green peppers
    Halved olives
    Greek salad dressing
    feta cheese
    This recipe is delicious.

    Yea, I do a pasta salad too. Mine looks (loosely) like this:

    tri colour rotini pasta
    cubes of cheese
    olives
    roasted red peppers
    marinated artichoke hearts
    and whatever else
    like, small peices of brocolli, or whatever
    toss all this and add
    the juice from the aritchoke hearts and Bearnsteins cheese fantastic salad dressing

    This is a potato salad recipe that I just got from my friend's Mom....SUPER yummy...I made it for dinner tonight!

    Nereida's Potato Salad

    8-10 small potatoes

    1 cup mayonnaise
    1/2 tbsp. wine vinegar
    1 teaspoon yellow mustard
    1/4 teaspoon black pepper
    1/2 teaspoon dill weed
    1/4 teaspoon paprika
    1/4 teaspoon parsley flakes
    1/8 teaspoon celery seed
    3 hard boiled eggs (2 for salad, 1 for garnish on top, sliced)

    Boil potatoes until done, cool, and cut into small pieces. Whip mayo with a whisk until creamy/fluffy (the key according to her), add vinegar and whip again. Add other ingredients. After all are combined, taste and adjust seasonings if needed (she says sometimes she adds more mustard and paprika). Blend mixture with potatoes, garnish with sliced egg on top, and chill until ready to serve.

    I like to make this pasta salad...not too unike others that are already on here.

    Tri Color spiral pasta
    Cherry tomatoes (or diced tomatoes)
    Diced cucumber
    Diced baby carrots
    Cut up broccoli
    Green or black olives
    Cut up cauliflower
    Pour bottle of Italian dressing over, chill and serve!

    I am also known for my deviled eggs, and they are ALWAYS requested.
