    Default Jiffy Corn Muffin Mix

    Jiffy Corn Muffin Mix

    Makes 6 muffins

    Ingredients

    Corn Muffin Mix
    2/3 cup all-purpose flour
    1/2 cup yellow cornmeal
    3 tablespoons granulated sugar
    1 tablespoon baking powder
    1/4 teaspoon salt
    2 tablespoons vegetable oil

    To make muffins add

    1 egg
    1/3 cup milk

    Optional Ingredients
    1/2 cup grated cheddar cheese (optional)
    2 ounces canned chilies (optional)
    1/4 cup drained chopped pimiento (optional)
    1/2 cup chopped onion (optional)

    Directions
    Combine first 5 ingredients in a bowl, mix well.

    Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.

    If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe.

    To make Corn Muffins, preheat oven to 400F, spray muffin pan with non-stick cooking spray.

    OPTIONAL: To mix, add any combination of optional ingredients you prefer.

    Combine mix with egg and milk, mixing well.

    Fill muffin pan 1/2 full, bake for 15-20 minutes.

    Thanks for the corn muffin recipe that is what i use but i am sure i can save by making my own.

    Sounds easy enough! I make corn muffins for my birds, and I dump extra corn (among other treats) into them to give the parrots something to pick out!

    This is really good because I'm not sure how many knows this but the box Jiffy that you get at Aldis has lard in it! I am sure the regular Jiffy does as well. Like how unecessary is that?

    Way cheaper and healthier to bake from scratch.

    Good to know but oh so tasty. I gotta say, I've been known to do my home cooking with lard.

    My family & I have been using the boxes - we just like the taste, but I'll give this a try for sure!

    BTW: DD's fave Jiffy muffin recipie is to mix as directed, fill mini-muffin cups 1/2 full & add a piece of hotdog. Mini-corndog muffins! She loves these in her bento.
