    Default Hardee's Cinnamon Raisin Biscuits

    Hardee's Cinnamon Raisin Biscuits

    Makes about 24 biscuits

    4 cups self-rising flour

    3/4 cup Crisco
    2 cups milk or buttermilk
    2 teaspoons baking powder
    1 teaspoon salt
    1 teaspoon baking soda
    1/3 cup granulated sugar
    3 teaspoons cinnamon

    Mix flour, baking powder, salt, baking soda and sugar. Blend in shortening with a fork until mixture is fine. Add milk and stir until just mixed. Add raisins and mix. Add cinnamon and mix until swirled through batter. Do not mix batter any more than you have to. Scrape batter onto well floured surface. Flour top and pat down with hands until 1/2 inch thick. Cut with 2-inch cutter and place on greased baking pan. Bake at 400 degrees F for 10-15 minutes Until golden brown. Frost with powdered sugar icing.

    Do we use our own judgement as to how many raisins to use?

    Geesh...it's been a REALLY long day...

    1 cup raisins ( but could be to your choosing )

    Double checked the rest of the recipe and the rest is right.

    YES!!! And my judgment would be THREE!!!
    Not real keen on raisins 'in' stuff!

    Recipe sounds great.........will have to do something about the raisins!

    I think I could even handle it as it says 'pat down with hands' woohoo......don't have to ROLL DOUGH!!!

    I love these !!

    Can you freeze them, not iced I assume, with success? Or do you recommend doing a 1/2 batch or 1/4 batch? If I made the whole batch I'd surely eat them all ... UGH !!

    I don't know about freezing. Probably but not sure. You CAN cut in half or 1/4 but measure very carefully. Not much room for a mistake on smaller amount.

    When you make them, take one out and freeze it. That way you will now for the next time.

    Just wondering if anyone ended up experiementing with freezing these suckers? I wanna try the recipe as is the first time but 24 is far too many for my house!
