    Default cauliflower from Ruby Tuesdays

    Ruby Tuesdays now has a side dish that is cauliflower but it looks like mashed potatoes. It's part of a low carb diet and I'm wondering if anyone would know how to make this? It is so good!!! I am not good at tasting a food and knowing what ingredients are in there.

    I have heard of this in Atkins books, also using rutebagas rather than potatoes. I did try the rutebagas and they were delicious so I would imagine that this is good as well If I were making it for Atkins, I would cook it til it was very tender, mash it with a masher add heavy cream and butter. Oooh making me hungry.

    This is from "The South Beach Diet"

    Cheese Topped Chicken & Mashed Cauliflower (Calories 334) (Carbs 12g)
    5 oz (140g) (raw weight) boneless, skinless chicken breast (162)
    2 tbsp (1 oz/28g) shredded/grated low-fat cheese (70)
    1 medium tomato, sliced (35)
    1/4 tsp black pepper; 1 tsp olive or canola oil (45)
    4 oz (110g) cauliflower flowerets (florets) (25)
    1 tsp (5g) light butter (17)

    Recipe Instructions

    1. Beat the chicken breast to flatten, place in oven dish and drizzle oil over.
    2. Cook, covered in foil, in oven preheated to 180 degrees, for 20 minutes.
    3. Remove chicken from oven, top with sliced tomato, cheese, grill until cheese melts.
    4. Boil or microwave cauliflower until soft, mash with butter and pepper.

    4 cups cauliflower florets
    1 ounce butter flavored cooking spray
    1 fluid ounce fat-free half-and-half
    Pinch salt
    Pinch freshly ground black pepper

    Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.
