Does anyone have a thin mints recipe?
Years ago a friend of mine e-mailed me a recipe for thin mint cookies (they tasted just like the girl scout ones). I went to dig out the recipe for Christmas and IT IS GONE! I swear, I could cry! And this was a friend from high school, who has married and moved a few times, and I've lost track of her! So I can't even call her up and ask her to resend it!
If anyone has this one, or something similiar, I'd love to see it!

I just made some yesterday with ritz crackers. You melt 8 squares of Baker's semi-sweet chocolate and stir in 1/4 tsp of mint extract. Dip Ritz crackers in the chocolate and sprinkle the top with crushed candy canes. Put in the refrigerator for 1/2 hour. They were so quick, easy, and yummy!
